Tacos de Alambre
Makes:
4-5 servings

Ingredients
1 medium onion; dicedÂ
1 bell pepper; diced
2 inches mexican chorizoÂ
1 kg (2 lb) boneless chicken breast; diced
1 kg (2 lb) top sirloin steaks; diced
1 cup cooked bacon pieces
2 tsp salt
1/2 tsp black pepper
1 tsp oreganoÂ
1/4 tsp ground cumin
1/4 tsp garlic powderÂ
1 cup shredded mozzarella cheeseÂ
Preparation
• Heat a large skillet over medium-high heat and add the diced onions and bell peppers. Sauté for 2 minutes, until the onions begin to soften and become translucent. Next, incorporate the chorizo and cook for an additional 2 minutes to heat through. Add the diced chicken and steak along with the seasoning. Allow it to cook undisturbed for 3 minutes to achieve a good sear, then stir and continue cooking, stirring frequently, until the meat is no longer pink.
• Reduce the heat to medium-low and add the cooked bacon. Mix everything together until well combined. Generously sprinkle shredded cheese over the top of the alambre. Cover the skillet with a lid and let it sit for about 2 minutes.
Serve immediately with warm tortillas and your favorite salsa.
