Sprinkle evenly over batter before baking. Preparation 1. Preheat oven to 350°F (175°C). Grease and line a 13x18-inch sheet pan with parchment paper. 2. Cream the butter and sugars in a large mixing bowl on medium speed until light and fluffy (3–5 minutes). 3. Add eggs one at a time, beating well after each addition to fully incorporate. 4. Mix in the bananas, vanilla, and buttermilk until combined. 5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. 6. Gently fold the dry ingredients into the wet mixture until just combined — do not overmix. 7. Fold in the toasted nuts with a spatula. 8. Spread batter evenly into the prepared pan. Sprinkle streusel topping evenly over the surface. 9. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean 10. Cool completely in the pan before cutting into bars for neat edges. Step by Step Mazapan Rolls Recipe Mazapan Rolls Mazapan - Candied Peanuts Makes: 12 Ingredients Dough: 2 cups Milk ¾ cup water 1 TBSP Yeast 1 TBSP Sugar ¼ cup oil ¾ cup sugar ½ tsp Salt 1 Egg (optional; for a softer crust) 10–11 cups of flour (1,200–1,300 grams) Filling: 1 cup butter 1 cup Brown Sugar 1 packet of Maizena, Pecan Flavor, or 1 TBSP corn starch mixed with 2 TBSP water. 1/2 tsp vanilla 12 pieces of Mazapan, crumbled; divided Preparation 1. Heat milk to 105°F - 115°F. 2. Combine warm milk, yeast, and 1 tbsp sugar in a mixer bowl; set aside for 10 minutes until foamy. 3. Add water, oil, sugar, salt, and 3 cups flour; mix until smooth. 4. Gradually incorporate remaining flour, 1 cup at a time, and knead until well combined. Cover and let rise until doubled. 5.Meanwhile; in a saucepan, combine sauce ingredients, boil while stirring, then remove from heat. 6.Stir in Maizena or cornstarch and vanilla; let cool. 7.Preheat oven to 350°F and prepare baking sheets with parchment paper. 8. Roll risen dough on a Mazapan-sprinkled surface into a ½-inch thick rectangle, spread sauce, and sprinkle Mazapan crumbs. 9.Roll tightly from the long edge, seal seams, and slice into 1-inch thick pieces using thread. 10. Place slices on baking sheets, cover for 20 minutes, and bake for 20-25 minutes until golden or reaches 200°F internally. Tips: Weigh the flour to get a consistent dough; 1 cup of flour should weigh 120 grams. Check the internal temperature of the rolls to ensure the center is cooked through. Spray a 12-cup muffin pan with cooking spray. Set aside. ~Prepare Crumble Topping: In a Food processor pulse together the Cut Butter, flour, brown sugar, cinnamon, and nutmeg, until mixture looks like coarse crumbs. Set aside. ~Make Eggnog Muffins: •In a large mixing bowl add flour, sugar, baking powder, cinnamon, nutmeg, and salt. Stir, breaking up any clumps. •In a separate bowl combine eggnog, egg, melted butter, and vanilla extract. •Pour the wet ingredients into the dry and mix together gently with a rubber spatula just until combined and no flour residue remains. •Divide the batter evenly among the 12 muffin cups. Each one will be about 3/4 full. •Top each muffin cup off with 2 tablespoons of the crumb mixture. •Bake for 18-20 minutes or until toothpick inserted in the center comes out clean. •Remove from oven and let muffins cool in the pan for about 20 minutes. •Move muffins to a cooling rack to cool completely. ~Eggnog Glaze •In a bowl combine the powdered sugar and eggnog, stir with a fork. •for thicker glaze add more powdered sugar, for thinner glaze add more milk. •Drizzle the glaze over top of each muffin. * Make sure the muffins are completely cooled, eggnog glaze will melt if warm. Step by Step Giant Cookie Cake Recipe Giant Cookie Cake Makes: 8 Servings Ingredients •¾ cup unsalted butter, softened •¾ cup light brown sugar •¼ cup granulated sugar •1 large egg •2 tsp vanilla extract •2 cups all-purpose flour •½ tsp salt •1 tsp baking soda •1 cup semi-sweet chocolate chips •1 cup M&Ms Preparation -Preheat oven to 350F. -Spray round spring pan with non-stick cooking spray, or butter. -In a large bowl, beat together butter, brown sugar and granulated sugar until smooth. -Beat egg and vanilla into the butter mixture. -In a medium bowl, whisk together flour, salt and baking soda until well combined. -Stir in all of the chocolate chips and 1/2 cup of M&M's -Press cookie dough into the pan evenly. -Press the remaining ½ cup of M&M's into the top of the cookie. -Bake for 20-24 minutes. -Remove from oven and let cool completely before slicing and removing from pan. -Decorate the edge of cookie with icing and more Chocolate. Step by Step Knoxed Whipped Cream Recipe Knoxed Whipped Cream Makes: 20 Cookie filling Ingredients •1.5 Cups Whipping Cream •1/4 Cup Powdered Sugar •1 tsp Vanilla extract •2.5 tsp Knox Gelatine Powder (1 packet) •1.5 TBSP Cold Water •1 tsp Whipping Cream Preparation -Sprinkle your gelatin over the water and set aside. - In a cold mixing bowl, whip your Cold Whipping Cream on medium speed until its foamy. -Add in your powdered sugar and vanilla and continue mixing on medium speed until you reach very soft peaks -Melt gelatin for 5 seconds in the microwave. If not fully melted do another 3 seconds. You can tell gelatin is melted when there are no granules of unmelted gelatin visible. -After dissolving your gelatin; add in 1 tsp of Whipping Cream and mix. -Turn your mixer to low and add in your gelatin. Continue mixing on medium speed until your peaks are firm and holding their shape but don't over-mix, turn off mixer and transfer to piping bag or your preferred method to use Whipped Cream. *You can't re-use leftover Knoxed Whipped Cream or make it ahead of time. Step by Step Pecan Cream Cheese Rolls Recipe Pecan Cream Cheese Rolls Makes: 16 Rolls Ingredients ~Dough: 1 Cup Milk - warmed to 110°F 3 tsp Sugar 3 tsp Yeast 1/4 Cup Butter - Room temperature 1/2 tsp salt 1/4 Cup Sugar 1 Egg 3 Cup Flour, (add more if needed for a Soft dough *1 TBSP at a time.) ~Filling: •1 Block Cream Cheese, room temperature. •1/2 Cup Sugar •1 package of Maizena de Nuez •1 tsp Vanilla extract •1 TBSP of Milk •1 Cup Pecan Pieces ~Icing: 2 Cup Powdered Sugar 1-2 TBSP Milk *depending on your desired consistency. Preparation •In a Container Mix together Warm Milk (110°F), yeast and 3 tsp sugar, set aside to until frothy. •In a seperate Medium size Bowl add Sugar, Butter, Salt, Egg and 1 Cup of the Flour. Mix together until well combined. •Next add in the Yeast mixture, mix and keep adding in the remaining Flour, 1/2 Cup at a time •Knead for a nice Soft dough. •Cover and let rise until doubled in size •While the Dough is rising, make the Cream Cheese mixture and prepare your baking sheets with Parchment Paper. •In a small bowl, mix together Cream Cheese, Sugar, Maizena de Nuez, Vanilla extract and Milk. Combine well and set aside. •Once the Dough as doubled in size, place on a flat surface. •With a Pin Roll, roll into a Rectangle shape. •Spread on Cream Cheese Mixture •Add Pecan pieces on Top of Cream Cheese mixture. •Next Roll the dough, starting on the long side. •Once Rolled, cut with a Knife or use thread to make your rolls. •Place rolls on a prepared baking sheet, cover and let rise until doubled in size. •Preheat oven to 350°F while rolls are rising. •Bake them for 20-25 min, until internal temperature reaches 200°F. •Once baked, remove from oven and let cool. •While cooling, make the icing. •Mix together Icing ingredients until smooth, if needed add 1 more TBSP of Milk for a thinner consistency. •Glaze Rolls with pipping bag or spread on with a Spatula.
