Step by Step Baked Chicken Recipe Baked Chicken Makes: 3-4 servings Ingredients • 8-10 Chicken Drumsticks; skin on or off • 1/2 cup butter; cubed • 1/2 TBSP steak seasoning • 1/2 TBSP Italian seasoning • 1 roasted anaheim pepper; deseeded and sliced • 1 onion; sliced • 1 can condensed tomato soup • 1/2 cup BBQ sauce • 1 cup milk Preparation • Preheat the oven to 375°F • Place chicken drumsticks into a glass casserole dish and add butter cubes in between the drumsticks. • Next, start adding in the onions and pepper spreading them over the Drumsticks. • Mix together condensed tomato soup, BBQ sauce, the milk and seasonings until combined, pour over the drumsticks. • Place into the oven and bake for 1 hour at 375°F. Take out of the oven and check the internal temperature of the drumsticks, 170°F is the safe cooked temperature for drumsticks. Bake longer if needed. • Serve hot, alongside white rice and cucumbers. Step by Step Raspberry Cream Cheese Rolls Recipe Raspberry Cream Cheese Rolls Makes: 36 Rolls Ingredients ~Dough: • 2 cups Milk; warmed to 100°F • 2 TBSP Yeast • 1/2 Cup Sugar • 1/2 Cup Butter - Room temperature • 1 tsp salt • 2 Eggs • 6 - 7 Cup Flour (720 - 840g) *add more if needed for a Soft dough *1 TBSP at a time. ~Filling: •1.5 Block Cream Cheese, room temperature. •1/2 Cup Sugar •2 TBSP Cornstarch •1 tsp Vanilla extract •3 Cups Frozen Raspberry Pieces ~Icing: • .5 Block Cream Cheese • 1/2 Container Vanilla Frosting • 1 tsp Vanilla extract Preparation •Warm milk to 110°F; pour into a large bowl, mix in Sugar and yeast, let rest for 10 minutes until foamy. •Once the yeast is foamy (proofed); mix in Butter, Salt, Egg, and half of the Flour. Mix until well combined. •Keep adding in the remaining Flour, 1/2 Cup at a time •Knead for a nice soft dough. •Cover and let rise until doubled in size •While the Dough is rising, make the Cream Cheese mixture and prepare your baking sheets by lining them with parchment paper. •In a small bowl, mix Cream Cheese, Sugar, Cornstarch, and Vanilla extract. Combine well and set aside. •Once the Dough is doubled in size, place it on a cleaned surface. •With a Rolling pin, roll it into a rectangle shape leaving it about 1/4 inch thick. •Spread on Cream Cheese Mixture •Add Frozen raspberry pieces onto the Cream Cheese filling. •Next Roll the dough, starting on the long side. •Once Rolled, cut with thread or a Knife about 1 - 1.5 inches wide. •Place rolls on a prepared baking sheet, cover and let rise until doubled in size. •Preheat oven to 350°F while rolls are rising. •Bake at 350°F for 15-20 min, until golden tops (internal temperature 200°F) •Once baked, remove from oven and let cool. ~ While cooling, make the icing. •Mix Icing ingredients until smooth, and spread on with a Spatula once Rolls are cooled. Drain any excess fat and set aside. In a frying pan, fry the bacon pieces and chorizo. Add the chopped onion and bell peppers, cooking for 3-4 minutes until the onion becomes translucent and aromatic. Assembly: In a large soup pot, combine all the ingredients, including the pre-cooked meats and spices. Stir well, cover, and bring the mixture to a simmer. In a saucepan mix sugar, cocoa and flour until well combined. Add milk, butter and vanilla. Bring to a boil while stirring constantly, cook for 5 minutes. Take off the heat and cool sauce before spreading. - Roll out out the Dough into a large rectangle, 1 inch thick. - Spread on the Chocolate Sauce unto the dough - Gently roll it up starting from the long edge, pinch the seam closed tightly. - Cut 1 inch rolls with a unflavored floss or sewing thread. - Place your rolls on prepared baking sheet lined with parchment paper, cover with tea towel and let them rise - Place in the Prepared Baking Sheet, leaving 2 inches between each roll. - Cover and rise for 30 minutes - Pre-Heat oven to 350°F - Bake at 350°F for 12-15 minutes; depending on your oven and baking sheets. Rolls should be lightly golden. - Make frosting after all rolls are baked; In a saucepan mix Frosting ingredients over medium heat while stirring occasionally. Use a mixer. • Pour mixture into prepared pan and smooth with a spatula to make sure it is dispersed in an even layer. • Bake in preheated oven for 15-20 minutes or until set. • Let cake cool *if you are using shallow cookie sheet, create a border with parchment paper before adding the frosting to prevent it from running off. Preparation •Pat dry the Whole Chicken •Stuff the Onion & Lemon slices into the Chickens opening. •Spread melted Butter on the complete Chicken. •Mix spices together; rub spice mixture on the Chicken. •Place Chicken inside the Slow Cooker; Legs down and tucked in. •Add 1 Cup of Chicken Broth into the Slow Cooker; avoid pouring on Chicken, spices will run off or add the broth before placing Chicken in the Slow Cooker. •Cover and cook until internal temperature reaches 180°F near the middle bone. - 4 hours on High - 8 hours on Low Broil Chicken in the Oven for 5-10 min for crispy skin. Step by Step Refrigerator Turmeric Pickles Recipe Refrigerator Turmeric Pickles Makes: 3.5 Liters Ingredients • 4lbs of Pickling Pickles • 4 medium size Onions; sliced • 2 Bell Peppers (red/yellow); sliced • 5 Cups Sugar • 1/3 Cup Pickling salt • 3 Cups Vinegar • 1/2 tsp turmeric powder • 1.5 tsp Celery seed powder • 2 tsp Mustard seeds Preparation • Place pickles into a container with Iced cold water for 3 hours, this will give them a crunchy texture. • Drain them from the water, and cut them into smaller pieces, 4lbs yields 15-16 cups. • Gather the remaining ingredients, and slice onions and peppers. • Add the Ingredients to a large pot, and bring to a boil over medium heat. • Stir in Pickle pieces, cover, and bring to a boil, set a timer for 20 minutes *meanwhile prepare your jars • Add the mixture to jars, seal and cool, and keep refrigerated. *Proceed with the canning procedure for longer shelf life. Step by Step Soft Pretzels Recipe Soft Pretzels Makes: 10 Pretzels Ingredients Dough: •1 1/2 cups warm water •1 Tablespoon sugar •2 teaspoons salt • 2 1/4 teaspoons •4 1/2 cups all-purpose flour •1/4 cup melted butter For boiling & topping •10 cups water for boiling •2/3 cups baking soda •1 large egg yolk + 1 tbsp water • Coarse Salt or Sea Salt Preparation ~ Combine the water, sugar, and yeast in the bowl of a stand mixer. Allow to sit for 5 minutes, or until the mixture begins to foam. ~ Add the flour, salt and melted butter. Using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. ~ Cover and sit in a warm place for approximately 60 minutes or has doubled in size. ~Preheat the oven to 450° F. ~Line 2 half-sheet pans with parchment paper. Set aside. ~Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan. ~Meanwhile, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. 1•Roll out each piece of dough into a rope. 2•Make a U-shape with the rope, holding the ends of the rope, 3• cross them over each other, twist, and press onto the bottom of the U in order to form the shape of a pretzel. 4•Place onto the parchment-lined half sheet pan. ~Continue this with all the pieces. ~Place the pretzels, carefully, into the boiling water, 1 at a time, for 30 seconds. ~Remove them from the water using a large flat spatula. ~Return to the half sheet pan, brush the top of each pretzel with beaten egg yolk and water mixture and sprinkle with the Sea salt. ~When done boiling all the pretzels continue to baking. ~Bake until dark golden brown in color, approximately 12 to 14 minutes. ~Transfer to a cooling rack for at least 5 minutes before serving. ~Brush with melted butter if serving immediately. Step by Step Lemon Danish Recipe Lemon Danish Makes: 30-34 Danishes Ingredients •2 1/4 cups unsalted butter •5½ cups all-purpose flour •½ cup granulated sugar •4½ tsp instant yeast •2 tsp salt •2 tsp vanilla extract •1½ cups milk •2 eggs ~Lemon pie filling. Prepare as directed on Package. ~ For the Egg Wash: •1 egg white •1 tablespoon water ~For the Glaze: •1½ cups powdered sugar •2 tablespoons milk Preparation Make the Dough: •In the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt. Add 1/4 cup cold butter and work it in with your fingers until no large lumps remain. Add the vanilla, milk, and eggs. Mix with the paddle attachment on low speed until a dough begins to form, then switch to the dough hook and knead until a sticky dough forms. • Scrape the dough into a ball, and transfer it to a floured work surface. Cover it with plastic wrap, and let it rest for 10 minutes while you prepare the butter. ~ Make the Butter Block: In the Stand Mixer; cream the Butter until smooth. Divide the Butter in half and spread equal amounts on Parchment Paper 6" x 9", you should have 2 butter rectangular size 6" x 9". ~ Laminate the Dough: #1 - Roll the dough into a rectangle 12" wide x 24" long. Place one of the butter pieces onto the center third of the dough. Fold one side over the butter to cover it. Place the other butter piece atop the folded-over dough, and fold the remaining dough up over it. Pinch the open ends and side closed. #2 - Roll the dough double the length; then fold one side over the other to make a rectangular packet (letter fold) #3 - Dust the surface of the dough with flour, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes. #4 - Remove the dough from the refrigerator, and repeat step #2 . Wrap loosely (but completely) in plastic, and chill it for at least 2 hours. ~ Make the Lemon Pie Filling as directed on the package. ~ Assemble the Pastries: •Remove the dough from the refrigerator, unwrap it, and cut off thin strips starting on the wide end (not longway); take a strip, flatten the tip of one end and start wrapping the strip around the flatten tip. You should have a hole in the middle. •Cover the Danish lightly with greased plastic wrap, and let them rise for about 1 hour; they'll become slightly puffy. Preheat the oven to 400°F. •Use your fingers to press the centers of the dough. Spoon a TBSP of filling into the well of each round. ~Make the Egg Wash: In a small bowl, whisk together the egg white and water. Brush the exposed edges of the pastries with the egg wash. ~ Bake the Pastries: Bake the pastries, one pan at a time, until golden brown, 15 to 18 minutes. Remove them from the oven, and transfer to a wire rack to cool. ~Make the Glaze: In a small bowl, whisk the powdered sugar and milk. Drizzle the glaze atop the pastries.
