Step by Step Kilkje Recipe Kilkje Makes: 9 Servings Ingredients 7 cups Flour* + dusting 1 tbsp salt 7 eggs 1 cup Milk Preparation • In a Stand Mixer Bowl or a large bowl to mix by hand; add milk, eggs, and salt mix until well combined • Next, add 1 cup of flour and knead in until completely combined before adding more flour. • Continue adding the rest of the Flour, 1/2 Cup at a time. *Incorporating the Flour slowly is important, and the amount depends on your measuring. 1 cup of flour should weigh 120g. A hard packed cup of flour can weigh up to 200g. • Knead for 10 minutes after all flour is incorporated. • Cover and rest for a minimum of 1 hour or place in the Refrigerator over night. *If refrigerated; bring to the temperature before making pasta. • Cut dough into smaller pieces and work with one piece at a time. • With a pasta maker, start with the thickest setting and roll through, dusting with flour to prevent sticking. • Roll through 4 times on each # of setting until desired thickness for noodles is achieved. Dust with flour on each setting. *My setting for Kilkje noodle thickness is #5 • Next Roll the Dough through the Pasta attachment. • Hang or lay on Table to dry 1/2 Hour before cooking. * Make sure to separate noodles to avoid sticking during cooking. • Bring a pot of water to a boil, add the desired amount of noodles, return to a boil, and stirring occasionally. Once boiling drain noodles from water, rinse with cold water. Enjoy with cream gravy, fried onions, sweet pickles, and fried farmer sausage Storing: Let the noodles dry for a few hours before storing in an airtight container for freezing. Step by Step Peppanet Rolls/Buns Recipe Peppanet Rolls/Buns Makes: 28 Rolls Ingredients 2 Cup Warm Water 1 Cup Oil 1 Cup Milk 2 Eggs 1 tsp Pepper 1/4 tsp nutmeg 1/4 tsp ground cloves 2 tsp salt 1/2 tsp Cinnamon 1/4 Cup Sugar 1/2 tbsb Instant Yeast 8 Cups Flour Topping: Mix 2 packages of Jello Powder + 1/2 Cup sugar Cherry + Raspberry Jello Preparation •Warm liquids to 110°F (no hotter) •Add eggs to the liquid •Mix spices in a separate container •Mix everything together. •add in 4 Cups of Flour -incorporate well •Mix in the rest of the Flour (1 Cup at a time) •Soft Dough •Cover and Rise - Double in Size ~ Rolls: •Roll dough into rectangle •Spread on Whipping Cream •Sprinkle Jello mixture •Roll together - long side •Cut into 1.5" Rolls •Place in Baking Pan (sprayed, buttered or foiled) ~ Buns: •Weigh the dough if desired - 55g each •Roll around to get it smooth •Place in a baking pan, sprayed, buttered or foiled Buns or Rolls: •Preheat oven to 325°F •Cover and let Rise for 30 min •Brush on Whipping Cream •Sprinkle on Jello Powder mix •Cover and let Rise 30 min •Brush on Whipping Cream again •Sprinkle on more Jello Powder mix •Cover, rise for 20 min •Bake at 325° for 20 - 25min - until internal temperature reaches 200°F Cool & Enjoy Click for step by step pictures

Step by Step German Pancakes Recipe German Pancakes Makes: 8 servings Ingredients • 6 Eggs • 1 cup Milk • 1 tsp salt • 2 tsp vanilla • 1 cup Flour • 3 TBSP Butter; melted Preparation • Melt butter in the microwave, pour into a 9x13 casserole dish, covering the bottom. • In a Large bowl; add Eggs, milk, salt, Vanilla, mix until well combined. • Add flour, whisk together until smooth and no lumps are visible. • Immediately pour batter into the casserole dish with butter and place on the middle rack of a cold oven. • Close oven and set the temperature to 375° and bake for 35 minutes. * Make sure to use a raised casserole dish, the pancake will rise to over 4 inches. In a mixing bowl, cream together the butter, sugar, egg, molasses, and vanilla extract. In another bowl, mix sifted flour, baking soda, and salt. Step by Step Drumsticks Recipe Drumsticks Makes: 4 Servings Ingredients •12-14 Drumsticks Seasoning ingredients: • 1/4 Cup Parmesan Cheese • 1 TBSP Chili Powder • 1 TBSP Italian seasoning • 1 tsp Celery Salt • 1 tsp Pepper • 1/2 tbsp Salt • 1 tsp Paprika • 1 tsp Onion Salt ~ Cucumber Salad Ingredients: •2 Cups Cooked Noodles •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation Preparation of Salad: • Prepare your Macaroni Salad ahead of time for at least 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar in a small bowl. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. *Add salt to desired taste. - Cover and refrigerate for at least 1 Hour. Step by Step Rajas con Crema Recipe Rajas con Crema Makes: 1.5 liters Ingredients • 1 Large Onion; thinly sliced • 1/4 Cup Butter • 10 Chilaca (Anaheim Peppers); roasted, skinned and cut into small pieces. • 1 Cup Whipping Cream • 1 TBSP Chicken Bouillon powder Preparation • Roast Anaheim Peppers ahead of time; Roast on a BBQ until charcoaled, place in a bag and close the bag to allow Peppers to sweat and soften for about 30 min. Remove Peppers from the bag; remove charcoaled skin gently, remove stem and seeds and cut into smaller strips. • In a large saucepan or Skillet on medium heat; melt butter, add onions, cover until translucent. • Add roasted and cut peppers into the Saucepan along with the cream and Chicken Bouillon powder. • Stir, cover, turn to medium low heat and simmer for 10 minutes. • Enjoy Hot over or along any of your favorite dishes. * Our favorite is served on top of Homemade Beans on a Hamburger or Hotdogs. Water at 110°F •2 Cups milk heated to 110°F •3 TBSP melted butter •7 Cups all purpose flour •1/2 Cup Sugar •2 Eggs •2 tsp Salt Preparation -Dissolve Yeast in Water (110°F) with a teaspoon of sugar; let stand until frothy. - Combine yeast mixture, milk, 1/2 cup sugar and 2 Cups of Flour; Mix thoroughly. -Add melted butter, eggs and salt. Beat well. -Add the rest of the flour, 1 Cup at a time. *Soft dough. - Knead dough until smooth and satiny and put in greased bowl. -Cover and let rise in a warm place until double in bulk. -Turn out onto a floured board. -Roll Dough with rolling pin, about 1/2 inch thick. -Cut strips -Fold over and Cut (see pictures) -Place on greased baking sheets, cover and let rise until doubled. -Bake at 350 degrees for 10-15 minutes or until golden brown. -Remove from Oven and Baste with butter. Step by Step Mexican Lasagna Recipe Mexican Lasagna Makes: 6 Servings Ingredients • 6 lasagna sheets (Oven ready Lasagna noodles) • 3 Cups Spaghetti sauce • 2 Cups Ground Beef; cooked • 2 Cups Beans; cooked & drained • 16 -18 slices of Pepperoni • 1/2 Red onion; sliced • 2 Cups Shredded Cheese Preparation Layering & Preparation: Preheat oven to 350°F, prepare a 9x13 baking dish. 1 • Spread 1/2 Cup of Sauce into the bottom of the baking dish 2 • Place 3 uncooked lasagna sheets on top of the sauce. 3 • Next add Ground Beef, Beans and onions. 4 • Place half of the Pepperoni slices on top, then top with 1/2 Cup of shredded cheese. 5 • Spread 1/2 Cup of Sauce, then top with 3 uncooked lasagna sheets, continue by spreading on the remainder of the sauce, add the rest of the shredded cheese and place the remaining Pepperoni slices on top. 6 • Cover loosely with foil 7 • Bake, covered, in a preheated 350°F (180°C) oven, for 45 minutes. 8 • Uncover; Bake for an additional 10 minutes. Step by Step Fruity Pebbles Sugar Cookies Recipe Fruity Pebbles Sugar Cookies Makes: 24 - 30 Cookies Ingredients 1 Cup Butter - at room temperature 1 1/4 Cup Sugar 1 Egg, at room temperature 2 tsp Vanilla extract 2 1/4 Cups of Flour 1 Cup Fruity Pebbles Cereal 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt + 1 1/2 Cup Fruity Pebbles Cereal for dipping cookie dough before baking. Preparation • Preheat Oven to 350°F, Line baking Sheets with Parchment paper • Cream together the Butter and Sugar until smooth, using a hand mixer or a stand mixer. Add in the Egg and vanilla, beat to incorporate ingredients. • In a separate Bowl, Combine the rest of the ingredients. After combining the dry ingredients, add them to the Butter mixture. Mix on low speed until all ingredients are well combined. • Using a ice cream scoop; scoop out dough, dip and roll in the a bowl of Fruity Pebbles cereal, and place on prepared cookie sheet leaving 2 inches between each cookie. • Bake the cookies for 12-14 min at 350°F, edges just turning golden, soft in the middle. • Cool on the baking sheet for 10 min, transfer to cooling rack to cool completely. Step by Step Bacon wrapped Meatballs Recipe Bacon wrapped Meatballs Makes: 16 - 18 Meatballs Ingredients ~ Meat Balls ~ • 2 lbs Ground Beef • 2 cups panko or crushed crackers • 1 TBSP Italian seasoning • 1 tsp salt • 1/2 tsp black pepper • 2 Eggs • 1 TBSP BBQ sauce + brushing • 1/2 TBSP Mustard • 18 slices of raw Bacon ~ Sides ~ • Russet Potatoes, one for each person • 2-3 Onions; sliced Yields: 16-18 Meatballs *(1/2 Cup of meat for each ball) Preparation • Preheat your oven or BBQ to 375°F • Wrap the potatoes in foil, and wrap the onion slices in a separate piece of foil. About 4 slices in each foil, add some salt and pepper before closing. • Place them in the oven or on the BBQ. *these will take longer to cook than the meatballs. Rotating potatoes and onions packs occasionally to avoid burning. • In a large bowl; Mix meatball ingredients until well combined. • Scoop out meat with an ice cream scoop or 1/2 measuring cup. Form into a ball. • Wrap one slice of bacon around the meatball, place it onto a baking tray, and continue the same process with all the mixture. • Once finished; place the baking tray into the oven or straight onto the BBQ (without the tray) • Cook at 375° F for 30-40 minutes, until the internal temperature of the meatballs reaches 160°F. Brush on some extra BBQ, cook for an extra 5 minutes. • Baked Potatoes are fully cooked at 208-211˚F internal temperature. • Onions should be soft and juicy. Serve and Enjoy!
