Step by Step Flautas Recipe Flautas Makes: 20 - 24 Flautas Ingredients Ingredients for Flautas: •20-24 Corn Tortillas •4 cups shredded Chicken •Oil for frying Ingredients for Creamy Rice Casserole: •2 Cups White Rice; Cooked. •1 Cup of Corn •2 large Anaheim Peppers; roasted, peeled and cut into small strips. •2 Cups Shredded Mozzarella Cheese •1 Cup Whipping Cream. Preparation Preparation for Creamy Rice Casserole: •Preheat oven to 350°F •Mix together all the Ingredients, except 1 Cup of Mozzarella Cheese. •Add the mixed ingredients into a Heat safe Baking Dish. •Transfer to Oven and Bake at 350°F for 40 minutes; check at 30 min mark, Cheese should be melted and a little toasted, take out and serve. Preparation for Flautas: •On a skillet; heat to medium heat, heat corn Tortillas on the skillet, flip to warm both sides 30 seconds each side. Place on a kitchen towel and cover to keep warm until all Tortillas are warmed. •Once the Tortillas are warm; take one at a time, place shredded Chicken on the Tortilla and roll up, tucking in for a tight roll, also working quickly as it breaks when rolled cold. •Place rolled Tortilla on a baking sheet with the seam down to avoid unrolling, use a cup or heavy object and place it against the rolled Tortilla if necessary. •Once all the Tortillas are rolled; place baking sheet into the freezer for 1 hour to Freeze rolled Tortillas before frying. (They fry better frozen and don't unroll as easy) •Once frozen; prepare your skillet by adding oil (depending on the size of your skillet) about 1" if measuring. •Once heated to about 300°F; fry frozen with seam down first till golden and crunchy, turn and continue frying till both sides are golden and crunchy. •Take out of oil, place in a baking sheet covered with paper towel to let oil drip off. •Continue this until all Tortillas are fried. Enjoy Warm with a Delicious Creamy Rice Casserole and your favorite dipping sauce. Dipping sauce suggestions: Salsa, Ketchup, Mayo, Ranch, Chipotle or a combination of these. Step by Step Chicken Enchilada Casserole Recipe Chicken Enchilada Casserole Makes: 8 Servings Ingredients 7-8 chicken breast ½ cup butter Salt, to taste Black pepper, to taste Red pepper, to taste Seasoned salt, to taste Sauce & Filling 1 cup milk 1 can (10 oz) green enchilada sauce 1 can (10 oz) crema de pollo (cream of chicken) 4 oz Velveeta cheese 3 tbsp sour cream 10 corn tortillas, cut into sixths (or tortilla chips) Topping Shredded cheese, to taste Preparation Season and brown the chicken Season the chicken with seasoned salt, black pepper, and red pepper.Melt butter in a large skillet and brown the chicken on both sides until golden. Remove from heat and set aside. Prepare the sauce In a saucepan, gently warm the milk, green enchilada sauce, crema de pollo, Velveeta cheese, and sour cream. Stir until smooth and combined. Prepare tortillas Lightly fry or warm the tortilla pieces (or chips) if desired for added texture. Assemble the casserole Place the chicken in a greased glass baking dish.Pour the enchilada sauce mixture evenly over the chicken.Add the tortilla pieces, gently pressing them into the sauce. Step by Step Rieja / Scrambled Pancakes Recipe Rieja / Scrambled Pancakes Scrambled Pancakes Makes: 6 Ingredients *Large Recipe • 5 eggs • 2 Cups Milk • 2 Cups Flour • 1 tsp Salt • 1 tsp Baking Powder Preparation • In a medium sized bowl whisk eggs, add milk, flour, salt and Baking Powder, mix until well combined. • Heat Skillet on Medium High, add 1 tbsp of oil. Pour in mixture. • Cook until the bottom is golden brown, turn and break apart with a flipper to resemble scrambled eggs. • Cook until all sides are browned, stirring occasionally. • Serve Hot with your favorite side or Syrup for Scrambled Pancakes. Step by Step Louisiana Gnocchi Recipe Louisiana Gnocchi Makes: 2 Servings Ingredients ~Gnocchi Sauce: -1 package Gnocchi (3 Cups) -1/2 Red Onion - chopped -1 Yellow Pepper - chopped -1 Red Pepper- chopped -1 can Cream of Bacon -1/2 Cup Whipping Cream -1/2 Cup Hot Water -1 TBSP Parmesan Cheese -1/2 tsp salt -1/4 tsp ground black pepper -1 tsp Chicken Bouillon powder -1 TBSP Butter -Parsley flakes ~Baked Chicken: -2 chicken Boneless Breast -2 TBSP oil -2 Eggs -1 Cup Bread Crumbs -1/4 cup Parmesan cheese -1 teaspoon dried basil leaves -1 teaspoon dried oregano -½ teaspoon paprika -½ teaspoon onion powder -1 tsp salt -¼ tsp ground black pepper Preparation •Preheat oven to 350°F •Lightly grease a 9x13 inch baking dish. •In a Container, whip together eggs and Oil. Pour in a shallow dish for dipping. •In a separate shallow dish, mix together the bread crumbs, Parmesan cheese and spices. •Dip each chicken breast in the oil & Egg mixture, then in the bread crumb mixture. Press the bread crumbs to the chicken so each breast is coated fully. •Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture and oil. •Bake 40-50 minutes in the preheated oven, until internal temperature of the chicken reaches 165°F. •Meanwhile make Gnocchi and Sauce. •Use Store bought Gnocchi as directed on package. •Homemade frozen uncooked Gnocchi: add Gnocchi to Boiling Water, stir occasionally to prevent sticking to the Bottom. Gnocchi is ready when Floating on top. ~Make Sauce: •In a large Sauce pan on medium high heat; melt Butter, add chopped Peppers and Red onion. Stir and cook until fragrant and translucent. •Meanwhile mix spices in 1/2 Cup Water. Add mixture to Sauce Pan and stir to mix. •Continue by adding Cream of Bacon and Whipping Cream, stir to combine. •Lower the Heat to medium low; let it Simmer for 5 min. •Add in Gnocchi, stir and simmer for 5 min. •Transfer to a Heat safe dish and Serve with Baked Chicken. Step by Step Banana Pudding Pie Recipe Banana Pudding Pie Makes: Ingredients • 3 Cups of Cookie Crumbs (we chose Hojaldradas cookies) • 3/4 Butter; melted • 1 Package Instant Banana Pudding • 1/2 Block Cream Cheese; room temperature • 1 Cup Whipped Cream • Banana Slices for topping (optional) Preparation • Line an 9x12 dish with Parchment Paper (bigger dish for thinner crust) • Add melted Butter to Cookie Crumbs; we used Hojaldradas (Mexican store) cookies are sweet enough that no sugar is needed for the Crust. • Press mixed Crumbs into the dish until level and packed, set aside. • Prepare Instant Banana Pudding according to package, once prepared add Cream Cheese and Whipped Cream • Add pudding mixture on top of the crust, smooth until evenly distributed. • Cover and place into the refrigerator for 3 hours. Pudding will still be soft, cut and serve as desired. • For firmer pudding, place in the freezer until Pudding is harder. Enjoy!! Click for step by step pictures

Step by Step Pupusas & Coleslaw Recipe Pupusas & Coleslaw Makes: 12-15 Pupusas Ingredients Pupusas & Coleslaw PUPUSA DOUGH: - 4 cups masa harina (450 g) *Maseca - 2 tsp salt - 3 cups cold water (720 mL) FILLING: - 1 cup grated mozzarella cheese - 1 cup refried bean - 1 tablespoon vegetable oil, for frying COLESLAW: - 4 tsp distilled white vinegar - 1/4 cup sugar - 1/4 tsp mustard - 1/4 tsp salt - 1 cup mayonnaise - 1/2 head finely shredded cabbage, chopped - 1/4 cup carrots, shredded *Prepare the Coleslaw ahead of time* • Whisk vinegar, sugar, mustard and salt together until sugar is dissolved. Add mayonnaise and whisk to the mix. Add cabbage and carrots. Mix to combine. Refrigerate for 2 hours and serve. Preparation Pupusa Dough preparation: • In a large bowl, whisk together the masa harina and salt, then add the water. Use your hands to mix until the dough comes together with a clay-like texture. •Fill a small bowl with water and a bit of oil and set near your work station. You’ll wet your fingers with the mixture as you work to keep the dough from sticking to your hands. • Scoop portions of dough and roll into a ball, then flatten into an even round. • Fill the dough round with ½ TBSP refried beans, and 1 teaspoon mozzarella cheese. Fold the dough over the filling until it’s completely sealed. Then, pat out the ball between your hands until flat. If the pupusa cracks, patch it with a bit of dough and a little oil. Repeat with the remaining ingredients. • Heat a large pan or griddle over medium heat, add 1 TBSP Oil, then place 2-3 pupusas on the pan and cook for 2-4 minutes, or until the bottoms are golden brown. Flip and cook on the other side for 2-4 minutes more, until golden brown and warmed through. • Repeat with the remaining pupusas. • Serve the pupusas with Coleslaw, or your favorite side dish. • Enjoy! Step by Step Strawberry Bread Recipe Strawberry Bread Makes: 2 Loafs Ingredients Strawberry Bread ~Recipe below THE BREAD: • 3/4 cup sugar • 1/2 cup Margarine • 1/2 cup Buttermilk • 1 large egg • 1 tsp vanilla extract • 2 cups all-purpose flour • 1 teaspoons baking powder • 1/2 tsp baking soda • 1/4 tsp salt • 2 Cups diced strawberries + 2 TBSP flour ~ FOR THE GLAZE: • 1 Cup powdered sugar • 1/3 Cup finely diced strawberries • 1/2 tsp vanilla extract • 4 TBSP heavy cream or milk Preparation •Preheat the oven to 350 degrees, prepare 2 - 9"x5" bread pan, brush on melted butter and dust with Flour, remove excess Flour and set aside. •In a medium bowl, cream together the sugar and margarine. •Next; add in Buttermilk, Egg and Vanilla extract, combine. • Combine in the baking powder and salt. • Mix in 2 Cups of Flour and stir until just combined. • In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. • Fold the floured strawberries gently into the batter. • Pour equal amounts into 2 prepared 9"x5" bread pans • Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. • Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely. Glaze: • Combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Step by Step Chicken Noodle Soup Recipe Chicken Noodle Soup Makes: 25 servings Ingredients Chicken soup • 10 chicken drumsticks • 1 carrot; chopped or shredded • ½ onion; chopped • 5 pieces of star anis • 10 pieces of peppercorns • 7 bay leaves • 3 pieces of whole cloves • 1 TBSP dried parsley • ½ cinnamon stick • 1 ½ TBSP salt • 4 TBSP chicken bouillon • 1 Sazon package • 6 liters of water (24 cups) Noodles • 7 eggs; beaten • 1 cup milk • 1 TBSP salt • 8 cups flour + dusting Preparation • Place the chicken into a large soup pot, add spices, onion, and carrots into a spice bag/stuffing bag. Pour in the water, butter, and cover. Turn on heat on medium-high heat. Bring to a boil, turn to low heat, and simmer for 4 hours. • Meanwhile, prepare your egg noodles. - In a stand mixer; mix together flour, salt, eggs, and milk until a hard dough forms. - Rest for 30 minutes. Cut dough into smaller pieces and work with one piece at a time. - With a pasta maker, start with the thickest setting and roll through, dusting with flour to prevent sticking. - Roll through 4 times on each # of setting until desired thickness for noodles is achieved. Dust with flour on each setting. - Next roll the dough through the pasta attachment. - Lay on table to dry 1/2 Hour before cooking. Make sure to separate noodles to avoid sticking during cooking. - Bring a pot of water to a boil, add the desired amount of noodles, return to a boil, and stirring occasionally. Once boiling drain noodles from water, rinse with cold water. •Remove chicken and spice bag from the soup, strain soup into smaller pot, and serve over cooked egg noodles. ENJOY! Step by Step Norteñisimo Recipe Norteñisimo Makes: Serves 4 Ingredients Ingredients: • 2 kg Beef Chuck (Beef stew) • 2 tsp Salt • 1 tsp Pepper • 3 tsp Beef Bouillon powder • 1 tbsp Oil; for frying • 2 cans of Beer • 6 strips of Bacon; chopped • 1 Cup Ham pieces • 1/2 Onion; chopped • 2 Jalapeños; chopped • 1/2 Red Bell Pepper; chopped • 1/2 Cup shredded Mozzarella Cheese • 1 - 2 TBSP Soy sauce • 1 - 2 TBSP Worcestershire sauce Preparation • Cut Beef Chuck into smaller pieces • Season with Salt, Pepper and Beef Bouillon powder. • In a skillet; heat over medium heat, add oil and beef. Fry beef until just browned on all sides. • Transfer Beef to Slow Cooker, add Beer to completely cover Beef. *The Beer makes the Beef very tender. • Cook on Low for 6 hours or on High for 3 hours. • Meanwhile fry chopped Bacon, strain and set aside in a seperate container. • In the same skillet; Add chopped onions, cook until just translucent. Then add in Ham, Jalapeños and Red Bell pepper. Cook until vegetables are soft. • After Slow Cooker timer is up; add cooked Bacon, Ham and Vegetable mixture to the Slow Cooker and cook for 1 more hour on Low or 1/2 hour on High. • Stir in 1 TBSP of Soy sauce and 1 TBSP of Worcestershire Sauce, stir and taste. Add 1 more TBSP of each if necessary. *Soy sauce is extremely salty, don't add to much. • Serve Hot, top with Mozzarella Cheese. Enjoy with your favorite side dish. Click for step by step pictures

Step by Step Fried Noodles & Bean Tacos Recipe Fried Noodles & Bean Tacos Makes: 3-4 servings Ingredients NOODLES - 1 TBSP butter - 1/2 onion; chopped - 3-4 servings of dry spaghetti noodles; broken into 1-2 inch pieces - 1/2 tsp salt - 2 tsp tomato bouillon powder - 2 cups of water TACOS - Corn tortillas - Thin slices of mozzarella cheese - Refried beans Preparation NOODLES - In a medium-sized saucepan, over medium-high heat; melt the butter, add onions, and cook until translucent. Add the noodle pieces and stir occasionally to toast the noodles. Once the noodles are toasted, add the salt and tomato bouillon powder, stirring in the water. Cover and cook for 8 minutes. Uncover, stir, and test the noodles. Some brands of noodles take a little longer to cook. TACOS - In a frying pan, over medium-high heat; heat 1/2 inch of oil. Prepare your tacos, add a slice of cheese, add refried beans, and close. Fry in the heated oil, flipping once to crisp both sides. Enjoy your meal with a side of farmer sausage. Step by Step Klobasneks Recipe Klobasneks Makes: 48 - 50 Small Kolaches Ingredients •1 Cup Butter; melted •1/4 Cup Sugar •2 tsp salt •2 Cups Milk; heated to 110°F •2 TBSP Yeast + 1 tsp Sugar •1/2 Cup Warm Water; 110°F •6 Eggs; separated •7 Cups Flour •50 small Cheddar Sausage; or Breakfast Sausage and Cheese slices. Preparation 1. Dissolve yeast + 1 tsp Sugar in the warm water then add to the mixture. 2. Mix together the butter, sugar, salt and milk. 3. Add Proofed Yeast, 6 egg yolks and flour. 4. Mix well, Cover set in a warm place for 1 Hour or until doubled in size. 5. Prepare Baking Sheet lined with parchment paper. 6.Shape into small balls (50g); Flatten and roll into a small Oval, wrap a piece of sausage into the dough. 7. Place them in a baking sheet Let rise again until double in size. 8. Preheat oven to 350°F, mix together Egg Whites + 1 TBSP Water, brush gently on Kolaches. 9.
