Step by Step Bistec a la Mexicana Recipe Bistec a la Mexicana Makes: 6 Servings Ingredients • 2 lbs Beef Stew meat; chuck and/or round, diced into 3/4 inch cubes • 1 Beer • 2-3 Cups Beef Broth • 2 tsp salt • 1 tsp dried oregano • 1 tsp ground cumin • 1 TBSP Oil • 1/2 Onion; chopped • 1 Jalapeño; sliced • 1/2 Zucchini; chopped • 1 Red Bell Pepper; chopped Preparation • Place Meat cubes in a large bag, pour beer into the bag, close and refrigerate overnight to marinate. • Add marinated Meat/Beer, along with the salt and spices into the slow cooker. Pour in the Beef broth, enough to cover the meat. • Set the temperature to low, cook for 7 hours or on High Heat for 4 hours. • 1 hour before the cook time ends, add oil to a frying pan on medium heat. Add vegetables; cook vegetables, while stirring occasionally until onion is translucent. Transfer vegetables into the slow cooker with the meat, stir to incorporate and continue cooking. • Taste and add more salt if needed. • Serve family style with warm tortillas, rice and pickled jalapeno on the side, if desired. Step by Step Cookies & Cream Cheesecake Cups Recipe Cookies & Cream Cheesecake Cups Makes: 8-9 Cups (4oz size) Ingredients • 2 Cups Oreo cookie crumbs (1 small package of Oreo cookies) • 1 Block Cream Cheese • 1 Cup Whipping Cream • 2 tsp vanilla extract • 1/4 Cup butter; melted • 1/4 Cup + 2 TBSP Sugar Preparation - Seperate Oreo cookies and remove the filling, placing into a seperate small bowl for later use. - add Oreo cookies into food processor and pulse until fine crumbs form. Place crumbs into a bowl along with melted butter, mix until well incorporated. Set aside. - Add Whipping Cream, 1 tsp vanilla extract and 2 tbsp of Sugar into a mixer and whip until stiff peaks form. Set aside. - Next; mix together cream cheese, Oreo filling, 1 tsp Vanilla extract and 1/4 Cup of sugar until smooth. Fold in the Whipped Cream until just combined. - Assemble Cups: 1.- 1/4 Cup of Crumbs into a 4oz plastic cup, press down gently with a spoon to pack crumbs. Keep 1/4 cup of crumbs for topping. 2.- Next add 1/2 Cup of Creamcheese mixture into the cup, smooth with a spoon. *Divide leftover mixture into cups. 3.- For decoration; sprinkle with some crumbs. 4.- Close the containers with a lid and place in refrigerator for 3 hours or overnight. In a mixing bowl, cream together the butter, sugar, egg, molasses, and vanilla extract. In another bowl, mix sifted flour, baking soda, and salt. Gradually incorporate this dry mixture into the creamed mixture, blending until everything is well combined. Fold in the chocolate chips, pretzel pieces, potato chip pieces, and M&M's. Scoop the cookie dough onto the prepared baking sheet, ensuring there is a 2.5-inch space between each ball. Bake at 350°F for 10 to 12 minutes, or until the edges start to turn a light golden color. Step by Step Drumsticks Recipe Drumsticks Makes: 4 Servings Ingredients •12-14 Drumsticks Seasoning ingredients: • 1/4 Cup Parmesan Cheese • 1 TBSP Chili Powder • 1 TBSP Italian seasoning • 1 tsp Celery Salt • 1 tsp Pepper • 1/2 tbsp Salt • 1 tsp Paprika • 1 tsp Onion Salt ~ Cucumber Salad Ingredients: •2 Cups Cooked Noodles •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation Preparation of Salad: • Prepare your Macaroni Salad ahead of time for at least 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar in a small bowl. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. *Add salt to desired taste. - Cover and refrigerate for at least 1 Hour. Step by Step Rajas con Crema Recipe Rajas con Crema Makes: 1.5 liters Ingredients • 1 Large Onion; thinly sliced • 1/4 Cup Butter • 10 Chilaca (Anaheim Peppers); roasted, skinned and cut into small pieces. • 1 Cup Whipping Cream • 1 TBSP Chicken Bouillon powder Preparation • Roast Anaheim Peppers ahead of time; Roast on a BBQ until charcoaled, place in a bag and close the bag to allow Peppers to sweat and soften for about 30 min. Remove Peppers from the bag; remove charcoaled skin gently, remove stem and seeds and cut into smaller strips. • In a large saucepan or Skillet on medium heat; melt butter, add onions, cover until translucent. • Add roasted and cut peppers into the Saucepan along with the cream and Chicken Bouillon powder. • Stir, cover, turn to medium low heat and simmer for 10 minutes. • Enjoy Hot over or along any of your favorite dishes. * Our favorite is served on top of Homemade Beans on a Hamburger or Hotdogs. Step by Step Texas Roadhouse Style Buns Recipe Texas Roadhouse Style Buns Makes: 24 Buns Ingredients •4 tsp Yeast •1 tsp Sugar •1/2 c. Water at 110°F •2 Cups milk heated to 110°F •3 TBSP melted butter •7 Cups all purpose flour •1/2 Cup Sugar •2 Eggs •2 tsp Salt Preparation -Dissolve Yeast in Water (110°F) with a teaspoon of sugar; let stand until frothy. - Combine yeast mixture, milk, 1/2 cup sugar and 2 Cups of Flour; Mix thoroughly. -Add melted butter, eggs and salt. Beat well. -Add the rest of the flour, 1 Cup at a time. *Soft dough. - Knead dough until smooth and satiny and put in greased bowl. -Cover and let rise in a warm place until double in bulk. -Turn out onto a floured board. -Roll Dough with rolling pin, about 1/2 inch thick. -Cut strips -Fold over and Cut (see pictures) -Place on greased baking sheets, cover and let rise until doubled. -Bake at 350 degrees for 10-15 minutes or until golden brown. -Remove from Oven and Baste with butter. Step by Step Mexican Lasagna Recipe Mexican Lasagna Makes: 6 Servings Ingredients • 6 lasagna sheets (Oven ready Lasagna noodles) • 3 Cups Spaghetti sauce • 2 Cups Ground Beef; cooked • 2 Cups Beans; cooked & drained • 16 -18 slices of Pepperoni • 1/2 Red onion; sliced • 2 Cups Shredded Cheese Preparation Layering & Preparation: Preheat oven to 350°F, prepare a 9x13 baking dish. 1 • Spread 1/2 Cup of Sauce into the bottom of the baking dish 2 • Place 3 uncooked lasagna sheets on top of the sauce. 3 • Next add Ground Beef, Beans and onions. 4 • Place half of the Pepperoni slices on top, then top with 1/2 Cup of shredded cheese. 5 • Spread 1/2 Cup of Sauce, then top with 3 uncooked lasagna sheets, continue by spreading on the remainder of the sauce, add the rest of the shredded cheese and place the remaining Pepperoni slices on top. 6 • Cover loosely with foil 7 • Bake, covered, in a preheated 350°F (180°C) oven, for 45 minutes. 8 • Uncover; Bake for an additional 10 minutes. Step by Step Fruity Pebbles Sugar Cookies Recipe Fruity Pebbles Sugar Cookies Makes: 24 - 30 Cookies Ingredients 1 Cup Butter - at room temperature 1 1/4 Cup Sugar 1 Egg, at room temperature 2 tsp Vanilla extract 2 1/4 Cups of Flour 1 Cup Fruity Pebbles Cereal 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt + 1 1/2 Cup Fruity Pebbles Cereal for dipping cookie dough before baking. Preparation • Preheat Oven to 350°F, Line baking Sheets with Parchment paper • Cream together the Butter and Sugar until smooth, using a hand mixer or a stand mixer. Add in the Egg and vanilla, beat to incorporate ingredients. • In a separate Bowl, Combine the rest of the ingredients. After combining the dry ingredients, add them to the Butter mixture. Mix on low speed until all ingredients are well combined. • Using a ice cream scoop; scoop out dough, dip and roll in the a bowl of Fruity Pebbles cereal, and place on prepared cookie sheet leaving 2 inches between each cookie. • Bake the cookies for 12-14 min at 350°F, edges just turning golden, soft in the middle. • Cool on the baking sheet for 10 min, transfer to cooling rack to cool completely. Step by Step Bacon wrapped Meatballs Recipe Bacon wrapped Meatballs Makes: 16 - 18 Meatballs Ingredients ~ Meat Balls ~ • 2 lbs Ground Beef • 2 cups panko or crushed crackers • 1 TBSP Italian seasoning • 1 tsp salt • 1/2 tsp black pepper • 2 Eggs • 1 TBSP BBQ sauce + brushing • 1/2 TBSP Mustard • 18 slices of raw Bacon ~ Sides ~ • Russet Potatoes, one for each person • 2-3 Onions; sliced Yields: 16-18 Meatballs *(1/2 Cup of meat for each ball) Preparation • Preheat your oven or BBQ to 375°F • Wrap the potatoes in foil, and wrap the onion slices in a separate piece of foil. About 4 slices in each foil, add some salt and pepper before closing. • Place them in the oven or on the BBQ. *these will take longer to cook than the meatballs. Rotating potatoes and onions packs occasionally to avoid burning. • In a large bowl; Mix meatball ingredients until well combined. • Scoop out meat with an ice cream scoop or 1/2 measuring cup. Form into a ball. • Wrap one slice of bacon around the meatball, place it onto a baking tray, and continue the same process with all the mixture. • Once finished; place the baking tray into the oven or straight onto the BBQ (without the tray) • Cook at 375° F for 30-40 minutes, until the internal temperature of the meatballs reaches 160°F. Brush on some extra BBQ, cook for an extra 5 minutes. • Baked Potatoes are fully cooked at 208-211˚F internal temperature. • Onions should be soft and juicy. Serve and Enjoy! Step by Step Chicken Enchiladas Recipe Chicken Enchiladas Makes: 3 Servings Ingredients • 3 Cups Cooked Shredded Chicken (We used leftover rotisserie chicken) • 8-10 Corn Tortillas • 2 Cups of Mozzarella Cheese For The Sauce: •1/2 Cup Butter •3 TBSP Flour •½ tsp salt •1/4 tsp pepper •2 tsp chicken bouillon powder •2 cups water •1 cup cream •4 ounces green chilies Preparation ~ Prepare Sauce: - In a small saucepan on medium heat; melt Butter, Whisk in Spices; flour, salt, pepper, Bouillon and Parmesan Cheese, add Cream & Green Chillies. Bring to boil, lower heat, stirring occasionally to prevent burning. - Boil for 5 min. - Turn off heat and set aside. - Preheat oven to 350°F ~ Prepare Enchiladas: Warm up Corn Tortilla before rolling, place them in a towel to keep warm. 1- Take one Corn Tortilla 2- Place Shredded Chicken in the middle of the Tortilla 3- Scoop sauce on top of the Shredded Chicken 4- Add Mozzarella Cheese on top of the Sauce. 5- Roll Tortilla, tuck end under chicken and continue rolling. 6- Place Rolled Tortilla in a greased Baking Dish, loose end downward, closely together. 7- Continue Rolling all Tortillas in the same order. 8- Once complete; pour remaining Sauce on top of the rolled Tortillas , add remaining Mozzarella Cheese (add more Cheese if desired), sprinkle on Parsley flakes for Garnish. 9- Bake at 350°F for 40 minutes, until Cheese is melted and slightly browned. ~Creamy Rice: - Fry 1 Cup of Rice in a medium sized sauce pan, adding 2 TBSP of Butter. Once rice has browned, add 1 tsp of Chicken Bouillon powder and 2 Cups of Water. - Cover and cook for 20 min. Fluff rice with a fork, add 1/2 Cup of Whipping Cream and 2 TBSP of Parmesan Cheese. Mix together, sprinkle on Parsley flakes for Garnish. Enjoy Chicken Enchiladas with a Delicious Creamy Rice. Click for step by step pictures
