    Step by Step Toasted Pecan Cookies Recipe Toasted Pecan Cookies Makes: 40 - 45 Cookies Ingredients •2 Cup Brown Sugar •2 Cup White Sugar •2 Cup melted Butter •5 Eggs •1 Cup Cream •2 tsp. Vanilla extract •7 Cups Flour •2 tsp. Salt •2 tsp Baking Powder •4 Cups Oatmeal •2 Cups Toasted Pecans + 2 TBSP Butter Preparation • Preheat oven to 350°F, prepare Baking Sheets lined with parchment paper. • Melt 2 TBSP of Butter in a Skillet or raised pan on medium heat; add Pecans, stir continuously until Pecans are slightly toasted. Remove from heat, place in a separate bowl and set aside. • In a large bowl or Stand mixer; add in the Sugars, melted Butter, Eggs, Cream and Vanilla extract. Mix until all ingredients are well incorporated. • In a separate bowl; mix together Flour, Salt and Baking powder. After mixing add it to the big bowl if mixer wet ingredients. • Mix in the Oatmeal and Toasted Pecans next, mix together until just combined. • Scoop out dough with a ice cream Scoop; drop them onto the prepared baking sheet. • Bake at 350°F for 10-12 min, edges just slightly browned. • Cool on Baking Sheet for 5 min and then transfer to cooling rack to cool completely.     Step by Step Pork Birria Tacos Recipe Pork Birria Tacos Makes: 4 Servings Ingredients ~ Tortillas: •1 tsp yeast •3/4 cup warm water •1/2 tsp sugar •1 1/2 cups flour •1/2 cup cornflour (maseca) •2 tbsp olive oil •1 tsp salt ~ Filling •1 lb Cooked Pulled Pork •1 TBSP Cornstarch •1 Cup Chile Colorado Sauce *Mix cornstarch in with the pulled pork, add in Chile Colorado Sauce and heat in a saucepan. •2 Cups Mozzarella Cheese; shredded, add to Tacos. find Recipes for Pork and Sauce below. Preparation ~Preparing Tortillas and Birria Tacos: •In a medium bowl, add 1/2 cup warm water, yeast, and sugar and let it rise for 5-7 min. •In a large bowl, add the flour, cornflour, oil, proofed yeast, remaining water, salt and stir. Knead the dough until smooth for 4-5 min. Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 15-20 mins. •Place the dough onto a lightly floured surface. Divide it into 10 equal pieces. •Roll each into a circle about 6 inches. Heat a skillet over medium heat and place one circle into the pan. Cook each side until lightly brown for 30 sec. Remove them from the pan and keep them in a tortilla warmer or in a towel. •Dip Tortilla in the Chile Colorado Sauce •Place on a heated Skillet, flipping once to heat both sides. •Add cheese and Pulled Pork, fold Tortilla and heat through. •Top with Onions and Fresh cotijo Cheese; optional. Enjoy! **Smoked Pork Shoulder Pork Rub •1/3 Brown Sugar •1 TBSP paprika •1/4 cup salt •1 TBSP Pepper •1 TBSP onion powder •2 TBSP chilli powder •1 TBSP cumin Preparation for Pork: •Smoke Pork with Hickory wood chips for 3 hours. Turn of Smoke off and continue cooking in smoker until cooked. *Can also be cooked in slow Cooker, grill or Oven. •The pork is finished cooking when it pulls apart easily and reaches an internal temperature of 190 to 195° F. •Let rest for 1 hour, then unwrap the pork butt and pull the bone out and shred for pulled pork.     Step by Step Pizza [deep dish] Recipe Pizza [deep dish] Makes: 15 squares Ingredients DOUGH • 1.5 cup warm water (110°F) • 1.5 TBSP Yeast • 1 TBSP Sugar • 1.5 tsp Salt • 1/4 tsp Garlic Powder • 1/4 tsp Oregano (optional) • 4 Cups Flour (480g - 500g) • 1/4 cup olive oil + for brushing TOPPINGS (our choice) • 2 cups pizza sauce • Pepperoni slices • Ham; cooked, cubed • 1/2 onion; chopped • 1/2 bell pepper; chopped • Pineapple pieces • 3 cups shredded cheese Preparation •In a container; mix water, yeast, and sugar, set aside to proof for 10 minutes. •In a stand mixer bowl, combine yeast mixture, 2 cups of flour, olive oil, salt, garlic powder, and oregano. •Knead for 8 minutes, or until beginning to pull away from the sides of the bowl, the dough will still be slightly sticky. •Brush bowel with olive oil, then cover the bowl tightly and place it in a warm place. •Allow dough to rise for 40 minutes. •Preheat oven to 425°F, prepare a 12x17" baking sheet by brushing with oil. •Transfer dough to baking sheet, stretch the dough gently to fit the sheet.     Step by Step Bacon wrapped Meatballs Recipe Bacon wrapped Meatballs Makes: 16 - 18 Meatballs Ingredients ~ Meat Balls ~ • 2 lbs Ground Beef • 2 cups panko or crushed crackers • 1 TBSP Italian seasoning • 1 tsp salt • 1/2 tsp black pepper • 2 Eggs • 1 TBSP BBQ sauce + brushing • 1/2 TBSP Mustard • 18 slices of raw Bacon ~ Sides ~ • Russet Potatoes, one for each person • 2-3 Onions; sliced Yields: 16-18 Meatballs *(1/2 Cup of meat for each ball) Preparation • Preheat your oven or BBQ to 375°F • Wrap the potatoes in foil, and wrap the onion slices in a separate piece of foil. About 4 slices in each foil, add some salt and pepper before closing. • Place them in the oven or on the BBQ. *these will take longer to cook than the meatballs. Rotating potatoes and onions packs occasionally to avoid burning. • In a large bowl; Mix meatball ingredients until well combined. • Scoop out meat with an ice cream scoop or 1/2 measuring cup. Form into a ball. • Wrap one slice of bacon around the meatball, place it onto a baking tray, and continue the same process with all the mixture. • Once finished; place the baking tray into the oven or straight onto the BBQ (without the tray) • Cook at 375° F for 30-40 minutes, until the internal temperature of the meatballs reaches 160°F.     Step by Step Milanesa de Res Recipe Milanesa de Res Makes: 2 Servings Ingredients •2 pieces of Flank Steak •2 Cups Bread Crumbs •1 Egg •Salt & Pepper •Oil for frying Preparation -Remove Flank Steak from package, add salt and pepper, set aside while preparing the dipping. -Add Oil to the frying pan and turn to Medium heat. -Crack eggs in a shallow container, big enough to lay steaks in. Scramble eggs with fork or whisk; set aside. -In another shallow container, add in your Bread Crumbs. -Dip Flank Steak in Eggs (one at a time), turn to coat both sides. -Transfer steak to bread crumb dish, make sure to coat both sides with bread crumbs to cover entire steak. - Gently add coated Steak to the frying pan.     Step by Step Conchas Recipe Conchas Makes: 18 Conchas Ingredients 》Bun dough: 1 tsp sugar 3 tsp yeast 1 cup water (110°F) 3.5 cups flour 2 eggs + 1 yolk 1/2 cup sugar 1/2 tsp salt 1/2 cup softened butter 》Topping 1 cup flour 1 cup powdered sugar 1/2 cup softened butter 1/2 tsp vanilla extract 1/2 TBSP milk Pink food coloring (optional) 1 egg white for brushing Preparation 》Prepare the dough: Dissolve 1 tsp sugar, and yeast in warm water; let rest. Mix flour, sugar, and salt in a bowl. Add eggs and softened butter; mix well. Combine yeast mixture with dry ingredients and knead until smooth. Add flour if sticky. Cover and let the dough rise for 1 hour until doubled. 》Prepare the topping: Mix flour, butter, powdered sugar and vanilla, knead until smooth.     Step by Step Lemon Danish Recipe Lemon Danish Makes: 30-34 Danishes Ingredients •2 1/4 cups unsalted butter •5½ cups all-purpose flour •½ cup granulated sugar •4½ tsp instant yeast •2 tsp salt •2 tsp vanilla extract •1½ cups milk •2 eggs ~Lemon pie filling. Prepare as directed on Package. ~ For the Egg Wash: •1 egg white •1 tablespoon water ~For the Glaze: •1½ cups powdered sugar •2 tablespoons milk Preparation Make the Dough: •In the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt. Add 1/4 cup cold butter and work it in with your fingers until no large lumps remain. Add the vanilla, milk, and eggs. Mix with the paddle attachment on low speed until a dough begins to form, then switch to the dough hook and knead until a sticky dough forms. • Scrape the dough into a ball, and transfer it to a floured work surface. Cover it with plastic wrap, and let it rest for 10 minutes while you prepare the butter. ~ Make the Butter Block: In the Stand Mixer; cream the Butter until smooth. Divide the Butter in half and spread equal amounts on Parchment Paper 6" x 9", you should have 2 butter rectangular size 6" x 9". ~ Laminate the Dough: #1 - Roll the dough into a rectangle 12" wide x 24" long. Place one of the butter pieces onto the center third of the dough. Fold one side over the butter to cover it. Place the other butter piece atop the folded-over dough, and fold the remaining dough up over it. Pinch the open ends and side closed. #2 - Roll the dough double the length; then fold one side over the other to make a rectangular packet (letter fold) #3 - Dust the surface of the dough with flour, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes. #4 - Remove the dough from the refrigerator, and repeat step #2 . Wrap loosely (but completely) in plastic, and chill it for at least 2 hours. ~ Make the Lemon Pie Filling as directed on the package. ~ Assemble the Pastries: •Remove the dough from the refrigerator, unwrap it, and cut off thin strips starting on the wide end (not longway); take a strip, flatten the tip of one end and start wrapping the strip around the flatten tip. You should have a hole in the middle. •Cover the Danish lightly with greased plastic wrap, and let them rise for about 1 hour; they'll become slightly puffy. Preheat the oven to 400°F. •Use your fingers to press the centers of the dough. Spoon a TBSP of filling into the well of each round. ~Make the Egg Wash: In a small bowl, whisk together the egg white and water. Brush the exposed edges of the pastries with the egg wash. ~ Bake the Pastries: Bake the pastries, one pan at a time, until golden brown, 15 to 18 minutes. Remove them from the oven, and transfer to a wire rack to cool. ~Make the Glaze: In a small bowl, whisk the powdered sugar and milk. Drizzle the glaze atop the pastries.     Step by Step Milanesa & Rice Recipe Milanesa & Rice Fried Breaded Steak Makes: 4 Ingredients Milanesa - - 1 package Flank steak (6-8 pieces) - 1/2 Cup Flour - 3 Eggs - 2 Cups Crushed Corn flakes or Breadcrumbs - 1/2 tsp salt - 1/8 tsp pepper - 2 tsp Italian seasoning - Oil for frying Rice - - 1/4 Onion; chopped - 1 tsp Bacon fat - 1 Cup Rice - 1/2 Cup corn kernels - 1/2 Cup Carrot pieces - pinch of salt - 1/2 Cup Water - 1/2 Cup Tomato juice Preparation Milanesa Directions: Remove flank steak from the packaging, pat dry with a paper towel. Add salt and pepper to both sides and set aside while preparing the dipping. - Crack eggs in a shallow container, big enough to lay the steak in. Scramble eggs with a fork or whisk; set aside. - In another shallow container, add in your Breadcrumbs, salt, pepper, and Italian seasoning. - Coat steak on both sides with flour - Dip steak in Eggs, and turn to coat both sides. - Place the steak into the breadcrumb dish, and coat both sides with breadcrumbs to cover the entire steak, transfer to a plate until all steaks are coated. - Add Oil to the frying pan and turn to Medium heat. - Once the oil is heated; add Breaded Steaks to the heated oil, working in batches. - Check steak while frying; when it's golden brown on the bottom, turn to fry the other side. - Remove and place in a heat-safe dish. Rice preparation: - Add Bacon fat and chopped onions to a saucepan, set to medium heat, and fry until onions are translucent. Stirring occasionally. - Add Rice, stir, and brown rice slightly. Stirring occasionally, to avoid burning. - Add in Corn, carrots, a pinch of salt, water, and Tomato juice.
