Step by Step Chocolate Rolls Recipe Chocolate Rolls Makes: 27 - 30 Rolls Ingredients Ingredients for Dough: • 1 1/2 TBSP Yeast • 1 tsp Sugar • 1 Cup Water (110°F) • 1 Cups Milk; room temperature • 1/2 Cup melted Margarine • 1/2 Cup Sugar • 1/2 tsp Salt • 2 eggs; beaten • 6-7 Cups Flour ~ Chocolate Filling: •2 cups Sugar •2 TBSP Cocoa •1/2 Cup Butter •3/4 Cup Flour •2 cups Milk •1 tsp Vanilla extract ~ Glaze ~ • 1 1/2 Cup Heavy Cream • 1 Cup Sugar • 1 TBSP Cornstarch • 1/4 tsp Salt • 1 tsp Vanilla extract Preparation - In a container Mix together; Yeast, warm water (110°F), 1 tsp Sugar and set aside to proof. - In a separate Bowl Mix together; Milk, melted Butter, Salt, beaten eggs, Sugar and 3 Cups of Flour - Add in Proofed Yeast, mix until well combined and continue adding in Flour, 1 Cup at a time. - Dough a will be slightly sticky; cover, set in a warm spot and let rise double in size, about 1 - 1 1/2 hour. - Prepare Baking Sheet lined with parchment paper. - While the dough is rising, prepare Chocolate sauce. In a saucepan mix sugar, cocoa and flour until well combined. Add milk, butter and vanilla. Bring to a boil while stirring constantly, cook for 5 minutes. Take off the heat and cool sauce before spreading. - Roll out out the Dough into a large rectangle, 1 inch thick. - Spread on the Chocolate Sauce unto the dough - Gently roll it up starting from the long edge, pinch the seam closed tightly. - Cut 1 inch rolls with a unflavored floss or sewing thread. - Place your rolls on prepared baking sheet lined with parchment paper, cover with tea towel and let them rise - Place in the Prepared Baking Sheet, leaving 2 inches between each roll. - Cover and rise for 30 minutes - Pre-Heat oven to 350°F - Bake at 350°F for 12-15 minutes; depending on your oven and baking sheets. Rolls should be lightly golden. - Make frosting after all rolls are baked; In a saucepan mix Frosting ingredients over medium heat while stirring occasionally. Bring to a boil and take off heat. - Dip the tops of the rolls in the frosting - Drizzle with melted chocolate *Place rolls into freezer to harden chocolate quicker. Enjoy! Step by Step Texas Sheet Cake Recipe Texas Sheet Cake Makes: 24 squares Ingredients 1.5 cups water 1.5 cups melted butter 6 TBSP unsweetened cocoa powder 3/4 cup sour cream 3 large eggs 1 tsp vanilla extract 3 cups all-purpose flour 3 cups granulated sugar 1.5 tsp baking soda 1 tsp salt For the Frosting 6 TBSP milk 4 TBSP unsweetened cocoa powder 1/2 cup butter 3 3/4 cups powdered sugar Preparation •Preheat oven to 350° F and grease a 18x13'' cookie sheet, with at least 1 inch ledge. •In a medium-sized bowl; add water and melted butter . •Meanwhile, in a separate bowl, mix together the flour, cocoa powder, sugar, baking soda, and salt. • Add wet mixture to the flour mixture and mix until combined. Use a mixer. • Pour mixture into prepared pan and smooth with a spatula to make sure it is dispersed in an even layer. • Bake in preheated oven for 15-20 minutes or until set. • Let cake cool *if you are using shallow cookie sheet, create a border with parchment paper before adding the frosting to prevent it from running off. Remove the border once the frosting is set. For the Chocolate Sheet Cake Frosting • Add milk, cocoa, and butter to a saucepan. Bring mixture to a boil. • Once boiling, remove it from the heat and stir in powdered sugar. Until smooth • Pour hot icing over cake. Use a spatula to spread it evenly over the cake. Preparation •In a Container Mix together Warm Milk (110°F), yeast and 3 tsp sugar, set aside to until frothy. •In a separate Medium size Bowl add Sugar, Butter, Salt, Egg and 1 Cup of the Flour. Mix together until well combined. •Next add in the Yeast mixture, mix and keep adding in the remaining Flour, 1/2 Cup at a time •Knead for a nice Soft dough. •Cover and let rise until doubled in size •While the Dough is rising, make the Cream Cheese mixture and prepare your baking sheets with Parchment Paper. •In a small bowl, mix together Cream Cheese, Sugar, Maizena de Coco, Vanilla extract and Milk. Combine well and set aside. •Once the Dough as doubled in size, place on a flat surface. •With a Pin Roll, roll into a Rectangle shape. •Spread on Cream Cheese Mixture •Add Pecan pieces on Top of Cream Cheese mixture. •Next Roll the dough, starting on the long side. •Once Rolled, cut with a Knife or use thread to make your rolls. •Place rolls on a prepared baking sheet, cover and let rise until doubled in size. •Preheat oven to 350°F while rolls are rising. •Bake them for 20-25 min, until internal temperature reaches 200°F. •Once baked, remove from oven and let cool. •While cooling, make the icing. •Mix together Icing ingredients until smooth, if needed add 1 more TBSP of Milk for a thinner consistency. •Glaze Rolls with pipping bag or spread on with a Spatula. Step by Step Pollo Giro Recipe Pollo Giro Makes: 4 Servings Ingredients *Slow Cooker + Broil Recipe •1 Whole Chicken •1 Lemon, sliced •1/2 Cup, melted Butter •1/2 Onion •1 Cup Chicken Broth Spices: • 2 tsp salt • 1 tsp ground black pepper • 2 tsp dried thyme • 1 1/2 tsp paprika • 1 tsp dried oregano • 1 tsp onion powder • 1/2 tsp garlic powder * Pickled Red Onions - Prepare at least 24 hours in advance . - 1 Red Onion, sliced - 1 TBSP Salt - 1/4 Cup Lemon Juice - 1 Cup Boiling Water - add sliced Onions in a Mason Jar, along with the salt and Lemon Juice. - Pour in the Cup of Boiling Water, add more if Onions aren't covered. - Close with a Sealing lid, cool slightly before storing in the refrigerator for 24 hours. - Keep refrigerated after each use. Preparation •Pat dry the Whole Chicken •Stuff the Onion & Lemon slices into the Chickens opening. •Spread melted Butter on the complete Chicken. •Mix spices together; rub spice mixture on the Chicken. •Place Chicken inside the Slow Cooker; Legs down and tucked in. •Add 1 Cup of Chicken Broth into the Slow Cooker; avoid pouring on Chicken, spices will run off or add the broth before placing Chicken in the Slow Cooker. •Cover and cook until internal temperature reaches 180°F near the middle bone. - 4 hours on High - 8 hours on Low Broil Chicken in the Oven for 5-10 min for crispy skin. Step by Step Refrigerator Turmeric Pickles Recipe Refrigerator Turmeric Pickles Makes: 3.5 Liters Ingredients • 4lbs of Pickling Pickles • 4 medium size Onions; sliced • 2 Bell Peppers (red/yellow); sliced • 5 Cups Sugar • 1/3 Cup Pickling salt • 3 Cups Vinegar • 1/2 tsp turmeric powder • 1.5 tsp Celery seed powder • 2 tsp Mustard seeds Preparation • Place pickles into a container with Iced cold water for 3 hours, this will give them a crunchy texture. • Drain them from the water, and cut them into smaller pieces, 4lbs yields 15-16 cups. • Gather the remaining ingredients, and slice onions and peppers. • Add the Ingredients to a large pot, and bring to a boil over medium heat. • Stir in Pickle pieces, cover, and bring to a boil, set a timer for 20 minutes *meanwhile prepare your jars • Add the mixture to jars, seal and cool, and keep refrigerated. *Proceed with the canning procedure for longer shelf life. Step by Step Soft Pretzels Recipe Soft Pretzels Makes: 10 Pretzels Ingredients Dough: •1 1/2 cups warm water •1 Tablespoon sugar •2 teaspoons salt • 2 1/4 teaspoons •4 1/2 cups all-purpose flour •1/4 cup melted butter For boiling & topping •10 cups water for boiling •2/3 cups baking soda •1 large egg yolk + 1 tbsp water • Coarse Salt or Sea Salt Preparation ~ Combine the water, sugar, and yeast in the bowl of a stand mixer. Allow to sit for 5 minutes, or until the mixture begins to foam. ~ Add the flour, salt and melted butter. Using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. ~ Cover and sit in a warm place for approximately 60 minutes or has doubled in size. ~Preheat the oven to 450° F. ~Line 2 half-sheet pans with parchment paper. Set aside. ~Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan. ~Meanwhile, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. 1•Roll out each piece of dough into a rope. 2•Make a U-shape with the rope, holding the ends of the rope, 3• cross them over each other, twist, and press onto the bottom of the U in order to form the shape of a pretzel. 4•Place onto the parchment-lined half sheet pan. ~Continue this with all the pieces. ~Place the pretzels, carefully, into the boiling water, 1 at a time, for 30 seconds. ~Remove them from the water using a large flat spatula. ~Return to the half sheet pan, brush the top of each pretzel with beaten egg yolk and water mixture and sprinkle with the Sea salt. ~When done boiling all the pretzels continue to baking. ~Bake until dark golden brown in color, approximately 12 to 14 minutes. ~Transfer to a cooling rack for at least 5 minutes before serving. ~Brush with melted butter if serving immediately. Step by Step Lemon Danish Recipe Lemon Danish Makes: 30-34 Danishes Ingredients •2 1/4 cups unsalted butter •5½ cups all-purpose flour •½ cup granulated sugar •4½ tsp instant yeast •2 tsp salt •2 tsp vanilla extract •1½ cups milk •2 eggs ~Lemon pie filling. Prepare as directed on Package. ~ For the Egg Wash: •1 egg white •1 tablespoon water ~For the Glaze: •1½ cups powdered sugar •2 tablespoons milk Preparation Make the Dough: •In the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt. Add 1/4 cup cold butter and work it in with your fingers until no large lumps remain. Add the vanilla, milk, and eggs. Mix with the paddle attachment on low speed until a dough begins to form, then switch to the dough hook and knead until a sticky dough forms. • Scrape the dough into a ball, and transfer it to a floured work surface. Cover it with plastic wrap, and let it rest for 10 minutes while you prepare the butter. ~ Make the Butter Block: In the Stand Mixer; cream the Butter until smooth. Divide the Butter in half and spread equal amounts on Parchment Paper 6" x 9", you should have 2 butter rectangular size 6" x 9". ~ Laminate the Dough: #1 - Roll the dough into a rectangle 12" wide x 24" long. Place one of the butter pieces onto the center third of the dough. Fold one side over the butter to cover it. Place the other butter piece atop the folded-over dough, and fold the remaining dough up over it. Pinch the open ends and side closed. #2 - Roll the dough double the length; then fold one side over the other to make a rectangular packet (letter fold) #3 - Dust the surface of the dough with flour, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes. #4 - Remove the dough from the refrigerator, and repeat step #2 . Wrap loosely (but completely) in plastic, and chill it for at least 2 hours. ~ Make the Lemon Pie Filling as directed on the package. ~ Assemble the Pastries: •Remove the dough from the refrigerator, unwrap it, and cut off thin strips starting on the wide end (not longway); take a strip, flatten the tip of one end and start wrapping the strip around the flatten tip. You should have a hole in the middle. •Cover the Danish lightly with greased plastic wrap, and let them rise for about 1 hour; they'll become slightly puffy. Preheat the oven to 400°F. •Use your fingers to press the centers of the dough. Spoon a TBSP of filling into the well of each round. ~Make the Egg Wash: In a small bowl, whisk together the egg white and water. Brush the exposed edges of the pastries with the egg wash. ~ Bake the Pastries: Bake the pastries, one pan at a time, until golden brown, 15 to 18 minutes. Remove them from the oven, and transfer to a wire rack to cool. ~Make the Glaze: In a small bowl, whisk the powdered sugar and milk. Drizzle the glaze atop the pastries. Step by Step Carrot Banana Bread Recipe Carrot Banana Bread Makes: 12 Pieces Ingredients 2 Large egg 1 Cup applesauce 4 Mashed bananas 2/3 Cup maple syrup 2 tsp vanilla extract 1 1/2 Cup oats 2 tsp baking soda 3 tsp ground cinnamon 1 tsp ground ginger 1/2 tsp ground nutmeg 1/2 tsp salt 2 cup white whole wheat flour 1 cup Walnuts 2 cup grated carrots *grated and excess moisture removed. Preparation •Prepare your carrots, grate and wring out extra moisture. •Preheat your oven to 350ºF and lightly grease two 9 x 5 bread pan. •In a large mixing bowl, mix your egg, applesauce, bananas, maple syrup, and vanilla. •Fold in the shredded carrots and walnuts. •Fold in the oats, baking soda, cinnamon, ginger, nutmeg, and salt. •Spoon in the flour and gently fold it in until just combined. ~ Don’t overmix! •Pour the batter into the two prepared loaf pan, spreading it out evenly. •Bake for 30 minutes, then cover with foil and bake another 10-20 minutes, or until a toothpick inserted into the center comes out clean. •Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a cooling rack to cool completely Enjoy!! Step by Step Zuppa Toscana Recipe Zuppa Toscana Makes: 6 servings (3 Liters) Ingredients •1 pound Italian sausage; cooked •4 strips bacon, cooked and chopped •7 Cups Water •7 tsp Chicken Boulloin •2 large russet potatoes; peeled and cubed •1 garlic glove; crushed •1/2 onion, chopped •2 cups chopped Kale •1 cup heavy cream •1/2 tsp Salt •1/4 tsp Pepper Make your own Italian Sausage: • 1 pound Pork chunks Spices: • 3/4 tsp garlic powder • 1 tsp parsley spice • 2 tablespoon red wine • 1 tablespoon paprika • 2 teaspoons salt • 1/2 tsp Black pepper • 1 tsp Italian seasoning • Mix spices together including the wine, add mixture to the pork, incorporate the ingredients and grind pork in a meat grinder. • Cook and use for a recipe or Package in a freezer safe bag for later use. Preparation *Pre-cook Italian Sausage and Bacon separately. • Bring the Water to a boil in a large Pot. • Reduce to medium heat, add Chicken Boulloin potatoes, garlic, and onion to the boiling water; simmer over medium heat until the potatoes are tender, roughly 10 to 15 minutes. • Add the sausage and bacon; simmer for 10 minutes. • Add the kale and cream. • Season with salt and pepper to taste and simmer until the soup is heated through. *Do not boil. Step by Step Chicken Bone Broth Recipe Chicken Bone Broth Makes: 10 Cups Ingredients 1 lb. chicken bones 1 large onion 4 cloves garlic 2 large carrots 4 stalks celery 3 bay leaves 3 tablespoons apple cider vinegar 2 tsp salt 1 tsp whole Peppercorn 2-3 star anise 8 Cups Water Preparation • Pre-Heat oven to 400°F • Prepare the vegetables by cutting them into smaller portions, no need to do small as they will be discarded later. • Place the chicken, onion and garlic onto a baking sheet, line with foil for easy clean-up. Place the sheet into the oven at 400°F and set the timer for 20 minutes. • Then continue by transferring ingredients from the baking sheet to a Slow Cooker. Add the rest of the ingredients including the water. • Set slow cooker on Low, place lid on top (do not seal your Slow cooker with hooks if yours comes with hooks). • Cook for 24hrs • After 24 hours; remove large pieces from the bone broth, then continue to strain broth through a cheesecloth into a heat safe container, like a mason jar. • Seal the container, cool until safe to transfer to the refrigerator. • Scoop fat out before using, fat solidifies when cooled, makes it easier to remove. • Broth is ready to use in your favorite soup recipes or any recipes calling for Chicken Broth. ~ Making Broth from Bones and cooked on low for 24 hours is more nutritious rather than from pressure cooking or high heat.
