Step by Step Camaron Ranchero Recipe Camaron Ranchero Shrimp Soup Makes: 4 - 5 Servings Ingredients - 1 TBSP Butter - 1/2 Onion; chopped - 1 Garlic glove; minced - 1 - 2 Jalapeño; chopped - 1 lb Shrimp, cleaned, deveined and tail off and rinsed. - 4 Cups Water - 1 TBSP Tomato Boulloin powder - 1 TBSP Chicken or Shrimp Bouillon powder - 1 tsp Salt - 1/2 tsp Black pepper - 1 TBSP Soy Sauce - 1 TBSP Worcestershire sauce - 1 Cup Tomato Juice Preparation - In a large sized cooking pot, turn heat to medium high; add Butter, chopped Onions and minced garlic. Cook until onions are slightly translucent. - Add chopped Jalapeños, cook for another minute. Stir occasionally. - Add in Shrimp, stirring occasionally. Cook for 5 minutes. - Add in Water, Boulloin powders, salt, pepper, sauces and Tomato juice. Step by Step Knoxed Whipped Cream Recipe Knoxed Whipped Cream Makes: 20 Cookie filling Ingredients •1.5 Cups Whipping Cream •1/4 Cup Powdered Sugar •1 tsp Vanilla extract •2.5 tsp Knox Gelatine Powder (1 packet) •1.5 TBSP Cold Water •1 tsp Whipping Cream Preparation -Sprinkle your gelatin over the water and set aside. - In a cold mixing bowl, whip your Cold Whipping Cream on medium speed until its foamy. -Add in your powdered sugar and vanilla and continue mixing on medium speed until you reach very soft peaks -Melt gelatin for 5 seconds in the microwave. If not fully melted do another 3 seconds. You can tell gelatin is melted when there are no granules of unmelted gelatin visible. -After dissolving your gelatin; add in 1 tsp of Whipping Cream and mix. -Turn your mixer to low and add in your gelatin. Continue mixing on medium speed until your peaks are firm and holding their shape but don't over-mix, turn off mixer and transfer to piping bag or your preferred method to use Whipped Cream. *You can't re-use leftover Knoxed Whipped Cream or make it ahead of time. Step by Step Lemon Garlic Chicken & Asparagus Recipe Lemon Garlic Chicken & Asparagus Makes: 2 Servings Ingredients •2 boneless chicken breasts, cut into bite-sized chunks •1 bunch of asparagus •1/2 cup butter, softened •1 teaspoon oil •2 teaspoons minced garlic 1 teaspoon Italian seasoning 1/2 cup chicken broth •Juice of 1/2 lemon •1 tablespoon minced parsley Slices of lemon, for garnish ~ Chicken seasoning: •1 teaspoon salt •1 teaspoon black pepper •2 teaspoons onion powder Preparation ~ Slice chicken breasts into bite-sized chunks and season the Chicken seasoning. Set aside while you prepare the asparagus. ~ Wash and trim the ends of the asparagus, then blanch them in boiling water for 2 minutes, remove and set aside. You can skip this step if you have skinny asparagus. Drain and set aside. ~ Heat half butter and oil in a large skillet over medium-low heat. Gently stir-fry the chicken bites on all sides until golden brown. Lower the temperature, add one teaspoon minced garlic and Italian seasoning and stir and cook with chicken bites until fragrant. Remove the chicken bites from the skillet and set aside to a plate. Internal temperature of Cooked Chicken should reach 165°F. ~ In the same skillet over medium-high, add minced garlic then deglaze with chicken broth. Bring to a simmer and allow to reduce to half the volume. Add remaining butter, lemon juice, parsley. Stir to combine. ~ Add the blanched asparagus and toss for 2 minutes to cook it up. Add the sauteed chicken bites back to the pan and stir for another minute to reheat. Garnish the chicken and asparagus with more parsley, and lemon slices and serve with desired Sides. Enjoy! Step by Step Pickled Jalapeños Recipe Pickled Jalapeños Makes: 4 Liters Ingredients • 9 Cups Water • 3 Cups Vinegar • 3 TBSP Vegetable or Canola Oil • 1/4 Cup Salt • 4 Bay leaves • 1 tsp whole Black peppercorns • 1/2 tsp Oregano • 1/2 tsp whole Coriander seed • 2 kg Jalapeno peppers; sliced, whole, diced, coined, seed in or seed out - your preference. • 1 large Onion; sliced • 2 large Carrots; sliced or diced Preparation • Clean and Sanitize jars, set aside. • Clean Jalapeños and gather all ingredients. • In a Large Stock pot; add Water, Vinegar and Oil, set to medium high heat. Meanwhile add all your spices to a spice ball or spice net and cut vegetables to your liking. * Jalapeños can be cut in different ways (pictured) can also be seed in or no seed. • Add salt and spice ball to the hot Water/Vinegar mixture and stir to dissolve salt, next add the Carrots, place a lid on the stock pot and cook for 5 minutes. • Add Onions and Jalapeños, stir and cover stock pot. • Cook everything for 10 minutes, stir to rotate Jalapeños and cook for another 10 minutes. Jalapeños will turn to a faded Green. If any Jalapeños haven't faded, stir again cook for another 5 minutes. • Place Jars on a Kitchen Towel and prepare to fill jars. • Once cooking is done, turn heat to a simmer to keep liquid Hot. • Fill jars with Jalapeños first, adding as many as you can with leaving some space on top for the onions and carrots. • Once all the Jalapeños are in Jars, start adding Onions and Jalapeños to the jars, then add liquid to each jar, leaving 1 inch empty space in the Jar. • Wipe the rim clean and seal the Jar, *Cautious: it will be HOT • Ensure Jars are not touching each other, ensure jar is sealed and leave on counter until cooled. • Once cooled; transfer to refrigerator and enjoy with your favorite dishes. Step by Step Baked Beans Casserole Recipe Baked Beans Casserole Makes: 4 Servings Ingredients •2 cups cooked ground beef •2 cups cooked beans •2 cups cooked rice •1 cup mozzarella cheese •12 corn tortillas •Oil for frying Preparation •Pre-heat oven at 350°F •In a bowl, mix together cooked ground beef, beans, and rice. •Add mixture unto a heat safe casserole dish •Top with cheese •Place into the preheated oven, bake for 30 minutes. •Meanwhile heat 1 inch of oil in a frying pan over medium-high heat, cut the corn tortillas into triangles. Step by Step Chorizo Breakfast Biscuits Recipe Chorizo Breakfast Biscuits Makes: 12 Biscuts Ingredients ~Ingredients for Eggs: •1/4 Onion; Chopped •1 small Jalapeño; chopped •1 TBSP Butter •2 inches Chorizo •4 eggs; beaten •1 tsp salt •1/4 tsp pepper ~Ingredients for Biscuits: •2 cups Flour •1 TBSP baking powder •1 tsp salt •1 cup shredded cheddar cheese •1 tablespoon chives, minced •3/4 cup buttermilk, cold •1/2 Cup butter, melted •1 egg + 1 TBSP water (egg wash) Preparation ~Preparation for Eggs: •In a Skillet; add chopped onion and Jalapeño, Butter and Chorizo. •Fry and stir on medium heat, until onions are soft and translucent. •Add in the beaten eggs, along with salt and pepper. •Cook and stir until eggs are Scrambled and cooked through. ~Preparation for Biscuits: •Preheat oven to 350 degrees •Mix together the melted Butter and Cold buttermilk (this will create butter chuncks) stir and set aside. •In a food processor, add flour, baking powder and salt and pulse several times to combine. Add in cheddar cheese, chives and pulse several times until •Slowly pour buttermilk/butter mixture into flour mixture and pulse until dough is soft a forms a dough. •Turn dough out onto a lightly floured surface and knead with flour until no longer sticky. Roll dough out into a 1/2-inch-thick sheet and cut with a floured cutter. •Gently flatten and spread 2 pieces of dough until they are about 4 inches wide. ~Chorizo Eggs, Cheese Filling •Place about 2 tablespoons of scrambled eggs onto the dough. Top with another piece of dough and pinch the sides until they are sealed. •Place it on a baking sheet lined with parchment paper. •Whisk together egg + water to make a egg wash, brush egg wash on each pocket. •Repeat until all dough is used, gather and roll out scraps. •Bake for 15 to 20 minutes or until golden brown. • Serve immediately, store in your refrigerator or freezer. Step by Step Drumsticks Recipe Drumsticks Makes: 4 Servings Ingredients •12-14 Drumsticks Seasoning ingredients: • 1/4 Cup Parmesan Cheese • 1 TBSP Chili Powder • 1 TBSP Italian seasoning • 1 tsp Celery Salt • 1 tsp Pepper • 1/2 tbsp Salt • 1 tsp Paprika • 1 tsp Onion Salt ~ Cucumber Salad Ingredients: •2 Cups Cooked Noodles •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation Preparation of Salad: • Prepare your Macaroni Salad ahead of time for at least 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar in a small bowl. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. *Add salt to desired taste. - Cover and refrigerate for at least 1 Hour. Step by Step Easter Buns Recipe Easter Buns Makes: 20 Buns Ingredients Ingredients for Buns: • 1 1/2 cups Milk • 1/2 cup Butter • 3 TBSP Yeast • 1 cup Sugar • 1 Lemon, zest and juice • 1 Orange, zest and juice • 4 Eggs; well beaten. • 1 tsp Salt • 7 1/2 cups Flour; sifted Filling: •1 Cup Milk •1 Cup Cream •1/2 Cup Sugar •1 egg yolk •1 tsp Vanilla extract •Pinch of salt •3 TBSP Cornstarch ~ In a large saucepan add all ingredients except cornstarch, whisk and bring to a boil. Once boiling add cornstarch and continue whisking. Set aside to cool. Frosting: • 1 Block Cream Cheese • 1 Cup Vanilla frosting • 1/2 tsp lemon extract ~ Whip Ingredients together, set aside. • Colorful sprinkles Preparation • Scald milk and butter in a saucepan over medium high heat, until temperature reaches 180°F. Transfer scalded milk to heat safe bowl and place on a towel in the refrigerator to cool. • Meanwhile grate lemon and orange, then squeeze juice of each. • Once milk/butter mixture has cooled to 110°F add sugar and yeast. Let stand for 10 minutes to proof. • To the proofed mixture; add lemon + orange juice and zest, beaten eggs, sugar and salt. Mix well until smooth. • Continue by adding 2 Cups of Flour, knead for 1 min and add 1 Cup at a time until all flour is well incorporated, Knead for 5 minutes, soft dough. • Transfer to a floured Large Bowl, cover and rise in a warm spot until doubled. Meanwhile line baking sheets with Parchment Paper. • Cut and roll into balls (100g) and place on Baking Sheet, cover and allow to rise until doubled in size. • Meanwhile make filling and frosting and preheat oven to 320°F. • Bake at 320°F for about 15 minutes or until golden brown, internal temperature of Bun should be 200°F. • Transfer to cooling rack to cool completely before filling and frosting. • Once cooled; take a knife and cut a small opening, push the knife into the bun and move around to create a space for the filling. • Once all buns are opened; Fill buns with cooled filling. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil. - Meanwhile, In a large sized cooking pan, turn heat to medium high; add Butter, chopped Onions and minced garlic. Cook until onions are slightly translucent. - Add in Shrimp and oregano, Cook the shrimp, without moving them, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes. - Add in Cream, Boulloin powder, salt, pepper. Stir, and bring to a boil. - Stir in the shredded mozzarella cheese - Add Fettuccine noodles to the shrimp and sauce. Stir until noodles are covered in sauce. - Reduce heat and simmer for 2-3 minutes - Serve Hot with a side of garlic bread, top with more shredded mozzarella cheese if desired. ENJOY! Step by Step Krinjel Recipe Krinjel Makes: 33 Krinjel Ingredients •1 Cup Warm Water (110°F) •1 TBSP Sugar •1 TBSP Yeast •1/2 Cup Lard •1/2 Cup Butter •1 Cup Milk •1/2 TBSP Salt •1 TBSP Vinegar •5 Cups Flour Preparation •In a small bowl; mix together Warm Water, Sugar and Yeast. Set aside until frothy. • Meanwhile in a Stand mixer; cream together Lard and Butter. • Once creamed; add in Milk, Salt, Vinegar and 2 Cups Flour. Mix until well combined. • Next, adding in the Frothy yeast mixture, the remaining Flour and attach the Dough hook. • Mix and Knead on low sweed until a ball of Dough forms and the edges of the bowl come clean. Turn to Medium speed and Knead for 5 minutes. • Remove from the Mixer, cover and place in a warm area to rise for 60 minutes until doubled in size. •After rising; Preheat oven to 300F and cut off pieces from the Dough, I weighed mine for consistency (40g each) roll into a long log and twist. (How to twist Video on Instagram) •Bake at 300 for 40-50 minutes *rotate baking sheet at the 20 minute mark to avoid burning, if needed. Step by Step Soft Oatmeal Cookies Recipe Soft Oatmeal Cookies Makes: 30 small Cookies Ingredients • 1 cup margarine, softened • 1 cup white sugar • 1 cup brown sugar • 2 large eggs, beaten • 1 tsp vanilla extract • 2 cups all-purpose flour • 1 ½ tsp ground cinnamon • 1/4 tsp nutmeg • 1 tsp baking soda • 1 tsp salt • 3 cups dry oatmeal • 1 Cup Walnuts or Pecans pieces Preparation • Preheat oven to 350° F, prepare cookie sheet lined with parchment paper, and set aside. • In a medium-sized bowl; beat together sugars and margarine until smooth, mix in eggs and vanilla extract. • In a separate bowl mix together the dry ingredients except for oatmeal and walnuts or pecans. • Mix dry ingredients into the wet ingredients until well combined. • Mix in Oatmeal and walnuts or pecans. • Scoop into the prepared cookie sheet, press down lightly with a fork, and bake at 350° F; until light golden brown around the edges and centers are nearly set, 8 to 10 minutes • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
