    Step by Step Tacos de Alambre Recipe Tacos de Alambre Makes: 4-5 servings Ingredients 1 medium onion; diced 1 bell pepper; diced 2 inches mexican chorizo 1 kg (2 lb) boneless chicken breast; diced 1 kg (2 lb) top sirloin steaks; diced 1 cup cooked bacon pieces 2 tsp salt 1/2 tsp black pepper 1 tsp oregano 1/4 tsp ground cumin 1/4 tsp garlic powder 1 cup shredded mozzarella cheese Preparation • Heat a large skillet over medium-high heat and add the diced onions and bell peppers. Sauté for 2 minutes, until the onions begin to soften and become translucent. Next, incorporate the chorizo and cook for an additional 2 minutes to heat through. Add the diced chicken and steak along with the seasoning. Allow it to cook undisturbed for 3 minutes to achieve a good sear, then stir and continue cooking, stirring frequently, until the meat is no longer pink. • Reduce the heat to medium-low and add the cooked bacon.     Step by Step Chicken Lasagna Rolls Recipe Chicken Lasagna Rolls Makes: 4 Servings Ingredients •4 Cups Shredded Chicken •12 Pre-Cooked Lasagna Noodles •3 Cups Mozzarella Cheese For The Sauce: •1 cup water •1 cup Cream •1/4 cup butter •2 TBSP flour •½ tsp salt •1/4 tsp pepper •2 tsp Chicken bouillon powder •1 TBSP Parmesan Cheese ~ Cucumber Salad Ingredients: •2 Large Cucumbers, sliced into coins •1/4 Red Onion, chopped •1/4 Cup Dill, chopped •1 TBSP Mayonnaise •1/2 TBSP Vinegar •1/2 TBSP Sugar Preparation • Prepare your Cucumber Salad ahead of time for atleast 1 hour of Refrigeration. • Slice Cucumbers into thin round slices, chop red onions and Dill into small pieces. - Mix together Mayonnaise, vinegar and Sugar. - Add all ingredients into medium sized Bowl, mix until all ingredients are well incorporated. - Cover and refrigerate for at least 1 Hour. •Pre-Cooked Shredded Chicken (We used left over rotisserie chicken) •Pre-Cook Lasagna Noodles, lay flat on baking sheet lined with parchment paper. • Prepare Sauce: - In a small saucepan, add Cream, Water and Butter, on medium heat. Bring to boil, stirring occasionally to prevent burning. Whisk in Spices; flour, salt, pepper, Bouillon and Parmesan Cheese. - Bring to a boil, lower heat. Boil for 5 min. Turn off heat and set aside. - Preheat oven to 350°F • Prepare Rolls: 1- Take one Lasagna Sheet 2- Place Shredded Chicken on the Lasagna Sheet 3- Scoop sauce on top of the Shredded Chicken 4- Add Mozzarella Cheese on top of the Sauce. 5- Roll Lasagna Sheet together, tuck closest end under chicken and continue rolling. 6- Place Roll in a greased Baking Dish, loose end downward, closely together. 7- Continue Rolling all Lasagna Sheet in the same order. - Once complete; pour remaining Sauce on top of the Prepared Lasagna Rolls, add remaining Mozzarella Cheese (add more Cheese if desired), sprinkle on Parsley flakes for Garnish. - Bake at 350°F for 40 minutes, until Cheese is melted and slightly browned.     Step by Step Oreo Cheesecake Rolls Recipe Oreo Cheesecake Rolls Makes: 15 - 17 Rolls Ingredients Makes 15-17 Rolls ~Dough: 1 Cup Milk - warmed to 110°F 3 tsp Sugar 3 tsp Yeast 1/4 Cup Butter - Room temperature 1/2 tsp salt 1/4 Cup Sugar 1 Egg 3 Cup Flour ~Filling & Icing •2 Block Cream Cheese, room temperature. •1/4 Cup Sugar •Filling from Oreo cookies •2 tsp Vanilla extract ~Crumbs • 20 Oreo cookie Crumbs - remove Oreo filling (set aside) and place cookies in a food processor, pulse until cookies have become small crumbs. Preparation •In a Stand mixer; mix together Warm Milk (110°F), yeast and 1 TBSP sugar, wait until frothy. •Once frothy; add Sugar, Butter, Salt, Egg and 1 Cup of the Flour. Mix together until well combined. •Attach Dough hook and add the remaining Flour. •Knead for 5 min on Medium, sprinkle on flour if stickiness to the side of the bowl. Touch Dough; it should not be sticky. •Cover and let rise until doubled in size; about 1 hour in a Warm area. •While the Dough is rising, make the Cream Cheese mixture, make Oreo crumbs and prepare your baking sheets with Parchment Paper or lined with Butter. •In a small bowl; with a hand mixer or Processor, mix together Cream Cheese, Sugar, Oreo filling, Vanilla extract. Combine well and set aside. •Once the Dough as doubled in size, place on a flat surface. •With a Pin Roll, roll into a Rectangle shape. •Spread on HALF of the Cream Cheese Mixture; save the other Half for the Icing after baked and cooled. •Add Oreo Crumbs on Top of Cream Cheese mixture. •Next Roll the dough, starting on the long side. •Once Rolled, cut with a Knife or use thread to make your rolls, about 1.5 inches wide. •Place rolls on a prepared baking sheet; cover and let rise until doubled in size, about 1 hour in a warm spot. •Preheat oven to 350°F while rolls are rising. •Bake them for 15 -20 min, until internal temperature reaches 200°F. •Once baked, remove from oven and let cool completely before adding the leftover Cream cheese mixture and sprinkle on leftover Oreo crumbs. In a separate bowl; whisk flour, baking soda, cinnamon, ginger, salt, and cloves together in a medium bowl. Cover bowl with plastic and refrigerate, about 1 hour Pre-heat oven to 375°F, line cookie sheets with parchment paper. Place 1/2 cup granulated sugar in a small bowl. Scoop dough into balls (ice cream scoop works great), roll balls in granulated sugar and transfer to prepared baking sheets, spacing balls 2 inches apart. Bake until tops are just beginning to crack, 8 to 10 minutes. Cool cookies on baking sheets for 5 min, then transfer to wire rack to cool completely.
