Step by Step Vareniki Pizza Recipe Vareniki Pizza Makes: 12 Slices Ingredients •1 Pizza Crust •1 Cup Whipping Cream •1 tsp Salt •1/2 tsp pepper •1 tsp bacon fat •1/4 Cup Parmesan cheese •1/3 Cup Flour •2 Cups Dry Cottage Cheese •1 Onion (sliced) •1 tbsp Butter •Pieces of Farmer Sausage (cut up into small pieces) •2 Cups Shredded Mozza Cheese Preparation •Preheat oven to 350°F •In a Skillet on medium heat add in Butter and Onion, stirring frequently, fry until Caramelized. When done set Caramelized Onions aside. •Make "Shmontfat" cream base In a cooking pot, combine Whipping Cream, salt, pepper, bacon fat, Parmesan cheese and Flour. Mixing and constantly watching (will boil over quick) bring to a boil and cook for 5 min. Remove from heat and let cool. •Prepare to layer ingredients on to the Pizza Crust. 1- "Shmontfat" 2- Dry Cottage Cheese (Add salt & pepper if desired) 3- Farmer Sausage Pieces 4- Fried Onions 5- Mozza Cheese • Bake Pizza for 30 min until Cheese is melted. Step by Step Bacon wrapped Meatballs Recipe Bacon wrapped Meatballs Makes: 16 - 18 Meatballs Ingredients ~ Meat Balls ~ • 2 lbs Ground Beef • 2 cups panko or crushed crackers • 1 TBSP Italian seasoning • 1 tsp salt • 1/2 tsp black pepper • 2 Eggs • 1 TBSP BBQ sauce + brushing • 1/2 TBSP Mustard • 18 slices of raw Bacon ~ Sides ~ • Russet Potatoes, one for each person • 2-3 Onions; sliced Yields: 16-18 Meatballs *(1/2 Cup of meat for each ball) Preparation • Preheat your oven or BBQ to 375°F • Wrap the potatoes in foil, and wrap the onion slices in a separate piece of foil. About 4 slices in each foil, add some salt and pepper before closing. • Place them in the oven or on the BBQ. *these will take longer to cook than the meatballs. Rotating potatoes and onions packs occasionally to avoid burning. • In a large bowl; Mix meatball ingredients until well combined. • Scoop out meat with an ice cream scoop or 1/2 measuring cup. Form into a ball. • Wrap one slice of bacon around the meatball, place it onto a baking tray, and continue the same process with all the mixture. • Once finished; place the baking tray into the oven or straight onto the BBQ (without the tray) • Cook at 375° F for 30-40 minutes, until the internal temperature of the meatballs reaches 160°F. Brush on some extra BBQ, cook for an extra 5 minutes. • Baked Potatoes are fully cooked at 208-211˚F internal temperature. • Onions should be soft and juicy. Serve and Enjoy! Step by Step Milanesa de Res Recipe Milanesa de Res Makes: 2 Servings Ingredients •2 pieces of Flank Steak •2 Cups Bread Crumbs •1 Egg •Salt & Pepper •Oil for frying Preparation -Remove Flank Steak from package, add salt and pepper, set aside while preparing the dipping. -Add Oil to the frying pan and turn to Medium heat. -Crack eggs in a shallow container, big enough to lay steaks in. Scramble eggs with fork or whisk; set aside. -In another shallow container, add in your Bread Crumbs. -Dip Flank Steak in Eggs (one at a time), turn to coat both sides. -Transfer steak to bread crumb dish, make sure to coat both sides with bread crumbs to cover entire steak. - Gently add coated Steak to the frying pan. While the first steak is Frying, continue dipping the rest like the first steak. - Check steak while frying, when it's golden brown on the bottom, turn to fry other side. -Remove and place in a heat safe dish. -Chicken frying the rest of the Steaks. Step by Step Conchas Recipe Conchas Makes: 18 Conchas Ingredients 》Bun dough: 1 tsp sugar 3 tsp yeast 1 cup water (110°F) 3.5 cups flour 2 eggs + 1 yolk 1/2 cup sugar 1/2 tsp salt 1/2 cup softened butter 》Topping 1 cup flour 1 cup powdered sugar 1/2 cup softened butter 1/2 tsp vanilla extract 1/2 TBSP milk Pink food coloring (optional) 1 egg white for brushing Preparation 》Prepare the dough: Dissolve 1 tsp sugar, and yeast in warm water; let rest. Mix flour, sugar, and salt in a bowl. Add eggs and softened butter; mix well. Combine yeast mixture with dry ingredients and knead until smooth. Add flour if sticky. Cover and let the dough rise for 1 hour until doubled. 》Prepare the topping: Mix flour, butter, powdered sugar and vanilla, knead until smooth. Optionally add food coloring. 》Form the conchas: Divide risen dough into even portions, about 55-60g each. Arrange on a baking sheet lined with grease or parchment paper. Combine egg white with 1 TBSP of water and brush the mixture over each bun. Divide the topping, flatten it, and place it on top of each bun. Step by Step Rollkucken Recipe Rollkucken Makes: 35 pieces Ingredients • 1 Cup Buttermilk • 1/2 Cup Cream • 3 Eggs • 1.5 tsp salt • 3 tsp baking powder • 1/2 tsp baking soda • 6 cups of Flour (720 grams) Preparation • In a stand Mixer or in a large bowl; mix all Ingredients except flour, until all ingredients are well combined. • Next start adding flour, 1 Cup at a time, attach Dough hook after 3 cups of flour are added. • Knead until all the flour is incorporated and the dough is soft and not sticky. • Leave dough in the bowel and set aside to rest for 15 min. • Roll out dough to about 1 cm of thickness; cut into strips, then rectangles and a 2 inch slit in the middle of the rectangle to make an opening to twist. • Bring one end of the rectangle, tuck into the slit and pull through. • In a Skillet or frying pan add oil, about 1 inch and heat over medium high heat. • Place a few into the heated oil and fry each side until golden on both sides. • Serve with Delicious Watermelon Enjoy!! *I Measure the flour; 120g for each cup of Flour, some pack it full and some do loosely . Step by Step Lemon Danish Recipe Lemon Danish Makes: 30-34 Danishes Ingredients •2 1/4 cups unsalted butter •5½ cups all-purpose flour •½ cup granulated sugar •4½ tsp instant yeast •2 tsp salt •2 tsp vanilla extract •1½ cups milk •2 eggs ~Lemon pie filling. Prepare as directed on Package. ~ For the Egg Wash: •1 egg white •1 tablespoon water ~For the Glaze: •1½ cups powdered sugar •2 tablespoons milk Preparation Make the Dough: •In the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt. Add 1/4 cup cold butter and work it in with your fingers until no large lumps remain. Add the vanilla, milk, and eggs. Mix with the paddle attachment on low speed until a dough begins to form, then switch to the dough hook and knead until a sticky dough forms. • Scrape the dough into a ball, and transfer it to a floured work surface. Cover it with plastic wrap, and let it rest for 10 minutes while you prepare the butter. ~ Make the Butter Block: In the Stand Mixer; cream the Butter until smooth. Divide the Butter in half and spread equal amounts on Parchment Paper 6" x 9", you should have 2 butter rectangular size 6" x 9". ~ Laminate the Dough: #1 - Roll the dough into a rectangle 12" wide x 24" long. Place one of the butter pieces onto the center third of the dough. Fold one side over the butter to cover it. Place the other butter piece atop the folded-over dough, and fold the remaining dough up over it. Pinch the open ends and side closed. #2 - Roll the dough double the length; then fold one side over the other to make a rectangular packet (letter fold) #3 - Dust the surface of the dough with flour, wrap it in plastic wrap, and chill in the refrigerator for 20 minutes. #4 - Remove the dough from the refrigerator, and repeat step #2 . Wrap loosely (but completely) in plastic, and chill it for at least 2 hours. ~ Make the Lemon Pie Filling as directed on the package. ~ Assemble the Pastries: •Remove the dough from the refrigerator, unwrap it, and cut off thin strips starting on the wide end (not longway); take a strip, flatten the tip of one end and start wrapping the strip around the flatten tip. You should have a hole in the middle. •Cover the Danish lightly with greased plastic wrap, and let them rise for about 1 hour; they'll become slightly puffy. Preheat the oven to 400°F. •Use your fingers to press the centers of the dough. Spoon a TBSP of filling into the well of each round. ~Make the Egg Wash: In a small bowl, whisk together the egg white and water. Brush the exposed edges of the pastries with the egg wash. ~ Bake the Pastries: Bake the pastries, one pan at a time, until golden brown, 15 to 18 minutes. Remove them from the oven, and transfer to a wire rack to cool. ~Make the Glaze: In a small bowl, whisk the powdered sugar and milk. Drizzle the glaze atop the pastries. Step by Step Milanesa & Rice Recipe Milanesa & Rice Fried Breaded Steak Makes: 4 Ingredients Milanesa - - 1 package Flank steak (6-8 pieces) - 1/2 Cup Flour - 3 Eggs - 2 Cups Crushed Corn flakes or Breadcrumbs - 1/2 tsp salt - 1/8 tsp pepper - 2 tsp Italian seasoning - Oil for frying Rice - - 1/4 Onion; chopped - 1 tsp Bacon fat - 1 Cup Rice - 1/2 Cup corn kernels - 1/2 Cup Carrot pieces - pinch of salt - 1/2 Cup Water - 1/2 Cup Tomato juice Preparation Milanesa Directions: Remove flank steak from the packaging, pat dry with a paper towel. Add salt and pepper to both sides and set aside while preparing the dipping. - Crack eggs in a shallow container, big enough to lay the steak in. Scramble eggs with a fork or whisk; set aside. - In another shallow container, add in your Breadcrumbs, salt, pepper, and Italian seasoning. - Coat steak on both sides with flour - Dip steak in Eggs, and turn to coat both sides. - Place the steak into the breadcrumb dish, and coat both sides with breadcrumbs to cover the entire steak, transfer to a plate until all steaks are coated. - Add Oil to the frying pan and turn to Medium heat. - Once the oil is heated; add Breaded Steaks to the heated oil, working in batches. - Check steak while frying; when it's golden brown on the bottom, turn to fry the other side. - Remove and place in a heat-safe dish. Rice preparation: - Add Bacon fat and chopped onions to a saucepan, set to medium heat, and fry until onions are translucent. Stirring occasionally. - Add Rice, stir, and brown rice slightly. Stirring occasionally, to avoid burning. - Add in Corn, carrots, a pinch of salt, water, and Tomato juice. Step by Step Banana Cheesecake Cups Recipe Banana Cheesecake Cups Makes: 8-9 Cups (4oz size) Ingredients • 1 Banana Cream pudding box • 1 Block Cream Cheese • 1 Cup Whipping Cream • 2 tsp vanilla extract • 2 cups graham cracker crumbs • 1/4 Cup butter; melted • 2/4 Cups + 2 TBSP Sugar Preparation - Prepare Banana Cream pudding according to instructions on the box, set aside to cool. - Meanwhile; add Whipping Cream, 1 tsp vanilla extract and 2 tbsp of Sugar into a mixer and whip until stiff peaks form. Set aside. - in a seperate container; mix graham cracker crumbs, melted butter and 1/4 cup of sugar. Mix until well combined. - in a third bowl; mix together cream cheese, 1 tsp Vanilla extract and 1/4 Cup of sugar until smooth. - Fold in the Banana Cream pudding into the cream cheese mixture until just incorporated. - Assemble Cups: 1.- 1/4 Cup of Crumbs into a 4oz plastic cup, press down gently with a spoon to pack crumbs. Keep 1/4 cup of crumbs for topping. 2.- Next add 1/2 Cup of Pudding/Creamcheese mixture into the cup, smooth with a spoon. *Divide leftover mixture into cups 3.- Spoon or pipe prepared Whipping Cream on top of the Pudding/Creamcheese mixture. Step by Step Homemade Bone Broth Recipe Homemade Bone Broth Makes: Ingredients 2-3 pounds bones; cooked or roasted (chicken, turkey, beef, or pork) 2 tablespoons apple cider vinegar (helps extract nutrients from bones) Water (enough to cover the bones) Optional: herbs like thyme, bay leaves, or parsley Preparation If using raw bones, roast them in the oven at 400°F for 30 minutes to enhance the flavor, but this is optional. Place the bones in the slow cooker with the apple cider vinegar, and any herbs you desire. Pour enough water into the slow cooker to cover the bones, leaving some space at the top to avoid overflow. Set the slow cooker to low and let it cook for 12-24 hours. The longer it cooks, the richer and thicker the broth will be. Once cooking is complete, use a slotted spoon to remove the bones. Strain the broth through a fine mesh sieve or cheesecloth. Let the broth cool before transferring it to jars or containers. You can refrigerate it for up to a week or freeze it for later use.
