Step by Step Syrup Cookies Recipe Syrup Cookies Makes: 24 Cookies Ingredients Make Syrup ahead of time: • 2 Cups Brown Sugar • 1 Cup Water • 1/8 cream of tartar (optional) -Place ingredients in a medium sized saucepan, bring to a boil over medium heat and lower heat to low simmer for 15 minutes, stirring occasionally. -Remove from heat and pour in a heat safe container. - Cool and refrigerate for 12 hours before using. Cookies: • 1 Cup Brown Sugar • 1 Cup White Sugar • 1 Cup Margarine or Oil • 1 Cup Whipping Cream • 2 Eggs • 1 tsp Vanilla • 2 Cups Syrup (made ahead of time) • 1 tsp Baking Soda • 1 1/2 tsp Baking Powder • 1/4 tsp Salt • 7 Cups All Purpose Flour Preparation • Preheat oven to 350° F, prepare Baking Sheets lined with parchment paper. • In a large mixing bowl or stand mixer; cream together Sugar and Margarine/Oil, then mix in eggs, Cream and vanilla extract. • Next add in the Syrup, mix until well combined. • Mix in baking soda, baking powder and salt. • Add in half of the Flour, mix well before adding the rest of the Flour. • Once all ingredients are well incorporated; scoop out the dough onto the prepared baking sheet lined with parchment paper. Ice cream Scoop works great. • Bake at 350°F for 12 - 13 minutes. • Cool for 5 minutes on the baking sheet before transferring to cooling rack to cool completely. • Eat them plain or add your favorite spread, dipped in Chocolate or both. Step by Step Tacos de Alambre Recipe Tacos de Alambre Makes: 4-5 servings Ingredients 1 medium onion; diced 1 bell pepper; diced 2 inches mexican chorizo 1 kg (2 lb) boneless chicken breast; diced 1 kg (2 lb) top sirloin steaks; diced 1 cup cooked bacon pieces 2 tsp salt 1/2 tsp black pepper 1 tsp oregano 1/4 tsp ground cumin 1/4 tsp garlic powder 1 cup shredded mozzarella cheese Preparation • Heat a large skillet over medium-high heat and add the diced onions and bell peppers. Sauté for 2 minutes, until the onions begin to soften and become translucent. Next, incorporate the chorizo and cook for an additional 2 minutes to heat through. Add the diced chicken and steak along with the seasoning. Allow it to cook undisturbed for 3 minutes to achieve a good sear, then stir and continue cooking, stirring frequently, until the meat is no longer pink. • Reduce the heat to medium-low and add the cooked bacon. Mix everything together until well combined. Generously sprinkle shredded cheese over the top of the alambre. Cover the skillet with a lid and let it sit for about 2 minutes. Step by Step Pickled Jalapeños Recipe Pickled Jalapeños Makes: 4 Liters Ingredients • 9 Cups Water • 3 Cups Vinegar • 3 TBSP Vegetable or Canola Oil • 1/4 Cup Salt • 4 Bay leaves • 1 tsp whole Black peppercorns • 1/2 tsp Oregano • 1/2 tsp whole Coriander seed • 2 kg Jalapeno peppers; sliced, whole, diced, coined, seed in or seed out - your preference. • 1 large Onion; sliced • 2 large Carrots; sliced or diced Preparation • Clean and Sanitize jars, set aside. • Clean Jalapeños and gather all ingredients. • In a Large Stock pot; add Water, Vinegar and Oil, set to medium high heat. Meanwhile add all your spices to a spice ball or spice net and cut vegetables to your liking. * Jalapeños can be cut in different ways (pictured) can also be seed in or no seed. • Add salt and spice ball to the hot Water/Vinegar mixture and stir to dissolve salt, next add the Carrots, place a lid on the stock pot and cook for 5 minutes. • Add Onions and Jalapeños, stir and cover stock pot. • Cook everything for 10 minutes, stir to rotate Jalapeños and cook for another 10 minutes. Jalapeños will turn to a faded Green. If any Jalapeños haven't faded, stir again cook for another 5 minutes. • Place Jars on a Kitchen Towel and prepare to fill jars. • Once cooking is done, turn heat to a simmer to keep liquid Hot. • Fill jars with Jalapeños first, adding as many as you can with leaving some space on top for the onions and carrots. • Once all the Jalapeños are in Jars, start adding Onions and Jalapeños to the jars, then add liquid to each jar, leaving 1 inch empty space in the Jar. • Wipe the rim clean and seal the Jar, *Cautious: it will be HOT • Ensure Jars are not touching each other, ensure jar is sealed and leave on counter until cooled. • Once cooled; transfer to refrigerator and enjoy with your favorite dishes. Step by Step Chai Latte Cake Recipe Chai Latte Cake Makes: 8 Servings Ingredients ~Spiced Cinnamon Sugar Filling 3/4 cup granulated sugar 2 1/2 tsp cinnamon 1/4 tsp ginger 1/2 tsp nutmeg 1/2 tsp cloves ~Make your own Chai Tea Spices 2 teaspoons ground cardamom 2 teaspoons ground allspice 2 teaspoons ground nutmeg 4 teaspoons ground cinnamon 2 teaspoon ground cloves 4 teaspoons ground ginger ~Brown Sugar Crumb Cake Topping 2/3 cup all purpose flour 1/2 cup brown sugar 1/2 TBSP Chai Spices (dry contents of tea bags or make your own from above recipe) 6 Tbsp. butter, cold 3 Tbsp. cinnamon sugar filling (from above) ~Coffee Cake 2 1/3 cups all purpose flour 3/4 cup granulated sugar 1/4 cup brown sugar 3 tsp baking powder 3/4 tsp salt 1/2 tsp Espresso powder 1/3 cup vegetable oil 3 eggs 1.5 TBSP Chai Spices (dry contents of tea bags or make your own from above recipe) 1 cup buttermilk 2 tsp vanilla extract Preparation ~Preheat oven to 350° F, grease a 9” springform pan (or a 9x9” pan). Set aside. ~Spiced Cinnamon Sugar Filling: In a small bowl, mix granulated sugar, cinnamon, ginger, nutmeg, cloves together. Set aside. ~Crumb Cake topping: *use 3 Tbsp. of the spiced cinnamon sugar (reserving the rest for the filling). Place all the Crumb topping ingredients in a food processor, Pulsating the mixture until all the ingredients have been incorporated and the mixture resembles coarse crumbs. Set aside. ~Chai Coffee Cake: In a bowl, mix all the dry ingredients together, mix to combine. Mix in the rest of the ingredients in. Stir until well combined. 1•Pour half of the batter into the pan. 2•Sprinkle spiced cinnamon sugar over the batter. 3•Top with remaining batter. 4•Sprinkle all the brown sugar crumb cake topping over the batter. ~Bake for 40-50 minutes, or until toothpick comes out clean. *At 30 min place a piece of foil over the top of the coffee cake to avoid topping to brown to quickly. Step by Step Louisiana Gnocchi Recipe Louisiana Gnocchi Makes: 2 Servings Ingredients ~Gnocchi Sauce: -1 package Gnocchi (3 Cups) -1/2 Red Onion - chopped -1 Yellow Pepper - chopped -1 Red Pepper- chopped -1 can Cream of Bacon -1/2 Cup Whipping Cream -1/2 Cup Hot Water -1 TBSP Parmesan Cheese -1/2 tsp salt -1/4 tsp ground black pepper -1 tsp Chicken Bouillon powder -1 TBSP Butter -Parsley flakes ~Baked Chicken: -2 chicken Boneless Breast -2 TBSP oil -2 Eggs -1 Cup Bread Crumbs -1/4 cup Parmesan cheese -1 teaspoon dried basil leaves -1 teaspoon dried oregano -½ teaspoon paprika -½ teaspoon onion powder -1 tsp salt -¼ tsp ground black pepper Preparation •Preheat oven to 350°F •Lightly grease a 9x13 inch baking dish. •In a Container, whip together eggs and Oil. Pour in a shallow dish for dipping. •In a separate shallow dish, mix together the bread crumbs, Parmesan cheese and spices. •Dip each chicken breast in the oil & Egg mixture, then in the bread crumb mixture. Press the bread crumbs to the chicken so each breast is coated fully. •Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture and oil. •Bake 40-50 minutes in the preheated oven, until internal temperature of the chicken reaches 165°F. •Meanwhile make Gnocchi and Sauce. •Use Store bought Gnocchi as directed on package. •Homemade frozen uncooked Gnocchi: add Gnocchi to Boiling Water, stir occasionally to prevent sticking to the Bottom. Gnocchi is ready when Floating on top. ~Make Sauce: •In a large Sauce pan on medium high heat; melt Butter, add chopped Peppers and Red onion. Stir and cook until fragrant and translucent. •Meanwhile mix spices in 1/2 Cup Water. Add mixture to Sauce Pan and stir to mix. •Continue by adding Cream of Bacon and Whipping Cream, stir to combine. •Lower the Heat to medium low; let it Simmer for 5 min. •Add in Gnocchi, stir and simmer for 5 min. •Transfer to a Heat safe dish and Serve with Baked Chicken. Step by Step Peppanet • Peppernuts • Pfeffernusse Recipe Peppanet • Peppernuts • Pfeffernusse Makes: 1.5 lbs Ingredients •1 cup sugar •1 cup corn syrup •1 cup margarine •1/2 tsp ground cloves •1/4 tsp ginger •1/2 tsp cinnamon •1/4 tsp nutmeg •1/4 tsp black pepper •1/2 tsp salt •2 TBSP molasses •2 eggs •1/4 cup buttermilk •1/2 tsp baking soda •4 - 5 cups flour Tips before you start: • dough is a sticky consistency • needs to be refrigerated overnight before rolling • thicker pieces will take longer to bake, and too thin will burn them very easily. Preparation • In a pot, mix together sugar, syrup, margarine, and spices, DON'T add the baking soda yet. • Heat the mixture until everything melts and blends smoothly. Let it cool. • Gradually add the remaining ingredients, mixing well until you achieve a cookie dough consistency. • Scoop the dough onto a cookie sheet lined with parchment paper to make smaller portions, cover with plastic wrap, and refrigerate overnight. • After chilling, take the trays out of the refrigerator and work with one piece of dough at a time. • Preheat your oven to 360°F. • Roll the dough into thin logs 1 inch diameter and cut them into small circles or pieces, each no larger than 1/2 inch. • Place the peppernuts on the parchment-lined cookie sheet, ensuring there is a 1/2 inch gap between each piece. • Fill a cookie sheet and bake for 9-11 minutes, keeping an eye on them to ensure they turn a light golden brown. • Allow them to cool completely before storing in a bag or airtight container. Step by Step Vegetable Soup Recipe Vegetable Soup Makes: 5 Liters Ingredients • 1/2 TBSP Butter • 1 onion; chopped • 1 Bell pepper; chopped • 1/2 TBSP Salt • 1 tsp pepper • 1 TBSP Italian seasoning • 10-12 Cups Chicken Broth • 1 small head of Cabbage; chopped • 1 can of Tomato chunks • 1 can of Green Beans • 4-5 stacks of Celery; chopped Preparation • In a pan on medium heat; add 1/2 TBSP Butter, chopped onions and peppers. Saute for 5 minutes, stirring occasionally. • Meanwhile, in a large Soup pot, on medium high heat; add Broth, salt, pepper and Italian seasoning. • Add sauteed vegetables into the Broth, stir. • Add Cabbage, Tomatoes, green beans and celery. Stir and place the lid on the soup pot. *Add water to cover vegetables if necessary. • Bring to a complete boil, turn down to medium low and simmer soup for 40 minutes. Step by Step Lemon Buns Recipe Lemon Buns Makes: 32 Buns Ingredients • 1 ½ cups warm Water; 110°F • 1 ½ TBSP Yeast • 1 cup Sugar • ½ cup warm Milk; 110°F • ½ cup Oil • 2 teaspoons Baking Powder • 1 teaspoon Salt • 1 Egg • 8 cups flour (960g) Filling: •2 Lemon Pie filling packages. •Vanilla frosting for decorating Preparation • In a mixing bowl; add Warm Water, Yeast, Sugar and warm Milk. Let stand for 10 minutes to proof yeast. • Mix in the rest of the ingredients, start mixing and adding 1 Cup of Flour at a time. Until no longer sticky and you have a soft dough. • Cover with a tea towel and let the dough rise, double in size. About 1 hour in a warm area. • Divide the dough into 2 parts; Roll out the 1 half of the dough, cut circles with a large hole (tire shaped). Lay on a towel, cover and let rise. • Roll out the second half of the dough; Cut circles and put in cookie sheets. Place the tire shaped pieces on top of the circles and let rise. • Preheat oven to 350°F • With your finger; press in the middle of the bun and bake for 10 - 12 minutes until golden brown on the top edges. • Prepare the Lemon pie filling according to package and fill the buns Lemon pie filling and decorate with Vanilla Frosting. Step by Step Fried Potatoes Recipe Fried Potatoes Makes: 4 Servings Ingredients • 7 Medium size Potatoes; peeled, sliced thinly. • 1 Onion; sliced • 2 TBSP Butter • 2 tsp Salt • 1/2 tsp pepper • 6 eggs; whisked Preparation •Bring a Pot filled with Water to a boil; meanwhile Peel potatoes and slice very thin and slice Onions. •Once water is Boiling, add in sliced potatoes. Cover and Cook Potatoes for 5min, drain water and set potatoes aside. •In a Skillet; on medium high heat, add the butter, once butter is melted add cooked potatoes to skillet. •Cook for 5 min on medium high heat undisturbed; with a flipper, flip potatoes to continue cooking on both sides. • Lower heat to medium and scootsh potatoes to one side, add in the Onions. • Stir in onions with the potatoes and cook until onions are translucent. • Meanwhile in a medium sized Bowl add in Eggs, salt and pepper. Whisk the eggs until scrambled. • Add whisked eggs to skillet, stir occasionally until eggs are cooked through. • Potatoes should be fried and slightly browned. Preparation •Warm up Whey liquid to 110°F. •In a medium sized Bowl add 2 Cups of Whey liquid, Yeast and 2 TBSP Sugar; stir and set aside to proof for 10 min. •In a Large Bowl; add 6 cups flour, add salt and 2 TBSP sugar and stir together. •Add the Proofed Yeast, remaining Whey liquid, oil and vinegar, Stir together with a Stand Mixer or by Hand. • Continue adding more Flour; 1 Cup at a time. •Knead for 5 minutes by hand on a floured surface, or in a Stand Mixer. •Place dough in a greased Bowl, cover with a tea towel and rest in a warm place until doubled in size, about 1 hour. •Once doubled in size; pinch or Cut off pieces of dough, weighing is optional (45g each piece). Step by Step BBQ'd Chicken Recipe BBQ'd Chicken Makes: 5 servings Ingredients • 5lb Whole chicken; cleaned and skinned • 1/4 cup honey mustard Brine: • 1 cup meat tenderizer • 1 gallon water • 2 TBSP adobo all purpose seasoning Chicken Rub - 1/4 cup parmesan cheese - 1 TBSP chili powder - 1 TBSP Italian seasoning - 1 tsp celery salt - 1 tsp pepper - 1/2 tbsp salt - 1 tsp paprika - 1 tsp onion powder Preparation 1. Combine water, meat tenderizer, and seasoning in a bowl. Add the cleaned and skinned chicken, ensuring it is fully submerged. Cover and refrigerate for 12 hours. 2. After marinating, rinse the chicken to remove any tenderizer residue, then blot it dry and transfer it into a heat-safe dish. 3. Brush the outside of the chicken with honey mustard or melted butter. 4. Prepare the chicken rub by mixing the spices together. Evenly sprinkle the Chicken Rub over the entire surface of the chicken. 5. Place the chicken on a preheated BBQ set to 230°F and cook for 4 hours. Increase the temperature to 350°F and continue cooking for an additional 1-2 hours, checking the internal temperature periodically. 6. The chicken is ready when its internal temperature reaches 165°F at the thickest part of the meat. Enjoy your BBQ'd chicken shredded in warm corn tortillas, topped with red pickled onions and salsa.
