Step by Step Buttersoup Recipe Buttersoup Makes: 5-6 Servings Ingredients - 6 Cups Chicken Bone Broth - 2 Potatoes; peeled and cubed - 2-3 TBSP Butter (3 for rich flavor) - 1/4 Cup Cream - 2 tsp Salt - 1 TBSP Parsley - 3 Cups dried Egg noodles *Make soup base from Water and spices instead of Chicken Bone Broth. - 6 Cups of Water - 2 TBSP Chicken Boulloin powder Add spices to a spice ball: - 1/2 Onion, large pieces - 2 star Anise - 6 Bay leaves - 1/2 TBSP peppercorns • Add all ingredients into large soup pot; bring to a boil over medium high heat, lower heat and simmer for 20 minutes. Remove spice ball and continue with Recipe. Preparation Preparation: - In a large Soup pot; add Bone broth, potatoes, salt and parsley to a boil. Lower heat and boil until potatoes are medium soft about 15 minutes (fork just goes through) - Add butter, stir in until melted. - Add the noodles and cook for 5 minutes or until noodles are soft. - Add cream, stir and enjoy. * add more salt according to taste and preferences Serve with your favorite side. Step by Step Lazy Cabbage Rolls Recipe Lazy Cabbage Rolls Makes: 5-6 Servings Ingredients ~ Meat Balls ~ • 2 lbs Ground Beef • 2 boxes of Stuffing (any flavor) • 1 TBSP Italian seasoning • 2 Eggs • 1 TBSP BBQ sauce • 1/2 TBSP Mustard • Oil for frying ~ Sauce ~ • 2 Cups Tomato sauce • 2 Cups Water • 1 Cup Pasta sauce • 3 Cups shredded cabbage • Salt and pepper to taste Preparation • In a large-sized bowl; mix all the ingredients for the Meatballs until all ingredients are well incorporated. • Add oil to the frying pan, and heat on medium-high heat. • Scoop the meat out of the bowl and shape it into balls, an ice cream scoop works great. • Once the Oil is hot; add Meatballs to the frying pan. Don't overcrowd, work in batches if necessary. • Fry meatballs on both sides until internal temperature reaches 160°F • Meanwhile in a Large cooking pot; add Tomato sauce, Water, and Pasta sauce, cover and turn to medium heat. • Once the Meatballs are cooked; transfer them into the pot of Sauce. • Add shredded cabbage, cover the pot, and cook on medium-high heat for 30 minutes or until the cabbage is soft. • Add salt and pepper to taste. ~ Serve with Mashed potatoes and corn or one of your favorite sides. ~ Serve leftovers as a delicious croissant sandwich. Step by Step Cocoa Cookies Recipe Cocoa Cookies Makes: 40 Cookies Ingredients •5 Cups Flour •3 cups Sugar •1 cup Cocoa Powder •1 tsp Baking Powder •1 tsp Baking Soda •1/2 tsp Salt •1 Cup Margarine or Butter, melted •1 Cup Hot water •1 1/2 cups Milk •3 Eggs, beaten •3 tsp Vanilla extract Preparation -Pre-heat oven to 350°F, prepare Baking Sheet lined with parchment paper. -In a Medium size Bowl, add; Flour, Sugar, Cocoa Powder, Baking Powder, Baking Soda and Salt. Whisk together, combining all Dry ingredients well. -In a Separate Bowl, add in the rest of the ingredients; Mixing until well combined. -Start combining the Dry Ingredients to the Wet ingredients; mix in half the Dry Ingredients first, mix until all Flour is incorporated. -Continue mixing until all the ingredients are combined, making sure to scrape the bottom of the bowl to insure all ingredients are mixed. -Scoop Dough onto the Prepared Baking Sheet, Ice cream scoop works great. -Bake Cookies in a Preheated oven at 350°F (175° C) — for 10 to 12 minutes, depending on the size of the cookie. Step by Step Cheese Crackers Recipe Cheese Crackers Makes: 80+ crackers Ingredients • 1 cup flour • 10 oz shredded cheese • 1/4 cup cubed butter • 1/2 tsp salt • 2 TBSP milk Preparation • Preheat your oven to 325°F • In a food processor, combine the flour, cheese, butter, and salt. Slowly add milk and mix until it forms a dough. Remove from processor, knead it slightly to smooth dough. • Place the dough on a lightly floured surface. Roll it out to about 1/8 inch thick. Use parchment paper if needed. • Use a knife or a pizza cutter to cut the dough into squares or desired shapes. • Place the crackers on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until they are golden brown. Let the crackers cool before serving. Step by Step Pizza/Sub buns Recipe Pizza/Sub buns Makes: 28 buns Ingredients • 3 cups whey or water; heated to 110°F • 1 TBSP sugar • 2 TBSP yeast • 1 cup milk; room temperature • 1 cup butter; melted • 2 eggs; beaten • 1/2 TBSP salt • 13.5 - 14 cups flour (1620 - 1680g) TIPS: 》Cold milk can slow down yeast, affecting bread rise; ideal temperature is 100–110ºF (38–43ºC). 》A second rise enhances yeast activity, resulting in a lighter, chewier texture and more complex flavor. Preparation • Combine heated whey or water, sugar, and yeast in a large bowl or stand mixer; let rest for 10 minutes. • Add milk, melted butter, eggs, salt, and 6 cups of flour; mix for 5 minutes. Gradually add remaining flour, knead for 8 minutes until slightly sticky. • Place dough in a floured bowl, cover, and let rise for 40 minutes. Step by Step Lemon Chicken Gnocchi Recipe Lemon Chicken Gnocchi Makes: 4 Servings Ingredients •3 chicken breasts cut in half lengthwise •2 TBSP Butter •Salt, pepper and Chicken Bouillon powder. •1 TBSP butter •2 cloves garlic minced •1/2 cup chicken broth •1 TBSP lemon juice •1 cup heavy/whipping cream •1 pound uncooked potato gnocchi •1/4 cup Parmesan Cheese •2 cups fresh spinach Preparation -Cut the chicken in half, lengthwise. Season each side with salt, Pepper and Chicken Bouillon powder. -Place butter and Chicken Breast in the Skillet; heat skillet to medium heat. (Work in batches if necessary) flipping chicken to cook on both sides. -Cook Chicken Breast until internal temperature reaches 170°F. -Once cooked; remove Chicken from the skillet and set aside. -Place 1 Tbsp of Butter and Garlic in the skillet, cook for about 30 seconds. -Stir in the chicken broth and lemon juice and scrape brown bits from the bottom of the pan. -Add in the cream and gnocchi. Stir and ensure the gnocchi is submerged in the liquid. Let it bubble gently; for 10 minutes, stirring occasionally, don not pre cook Gnocchi. - Add in the parmesan cheese and spinach. Mix until well combined. • In a Large bowl; mix all the remaining dry ingredients. • Add wet mixture to the dry mixture and mix well until all ingredients are well incorporated. •Scoop out cookie dough with an ice cream scoop. Step by Step Blondie Bars Recipe Blondie Bars Makes: 20 bars Ingredients SHORTBREAD CRUST: • 1 cup softened butter (227g) • 6 TBSP sugar (75g) • 1 tsp vanilla extract • 2.5 cups flour (300g) • 1/2 tsp salt FILLING: 1/2 cup butter (113g) 1 cup sugar (200g) 2 TBSP nuez Maizena* 1 can evaporated milk (354ml) 2 egg yolks 1 tsp vanilla extract 1 cup pecan pieces 1 cup walnut pieces 1 cup shredded coconut DRIZZLE: • 1/2 cup chocolate chips • 1/2 tsp coconut oil * if you can't find Nuez Maizena, use 2 tablespoons of regular cornstarch to thicken the mixture. Preparation •Preheat your oven to 350°F and line a 12x8 baking pan with parchment paper. In a mixing bowl, cream together the butter, sugar, and vanilla until the mixture is smooth. •In a separate bowl, whisk together the flour and salt, then combine it with the creamed mixture. •Evenly spread the shortbread dough into the prepared baking pan, smoothing the surface. •Create small holes in the dough to prevent it from rising during baking.
